As soon as I laid eyes on the cover of "VEG: Fresh, Vibrant, Delicious," I was hooked. The design is both elegant and striking, making it a perfect addition to any coffee table collection. But beyond the cover, this cookbook proved to be a treasure trove of vegetable-forward recipes that are as diverse as they are delicious.
Laura Sorkin's book features 150 innovative recipes that celebrate the beauty and versatility of vegetables. From salads to soups, stews to sides, and entrees to snacks, there is something for every craving and occasion. What impressed me the most was the simplicity and clarity of the recipes - even as a novice cook, I found them easy to follow and execute.
I had the pleasure of trying several recipes from the book, including the Spring Onion Dip, Asparagus Tart, Pasta with ‘Nduja & Butternut Squash, Rosti Egg in a Hole, and Bread & Butter Pickles. Each dish turned out to be a flavorful masterpiece that left me wanting to explore more. I'm already looking forward to testing out the soup recipes when the colder months roll in.
While I thoroughly enjoyed the stunning photography that graced the pages of this cookbook, I couldn't help but wish for more. The images were so enticing and mouth-watering that a few extra photos would have taken this book to another level.

Lots of nice vegetable-forward recipes to help add them to your meal rotation. I think it would be improved with more pictures, since a lot of the recipes may be unfamiliar and you don’t know how they’re supposed to look at the end ha.
Lots of expected appetizers and salads of course, but plenty of full meals that will expand your repertoire and keep dinner tasty and interesting!
This is definitely not your typical vegetable forward cookbook. Lots of diverse recipes so you can add more vegetables into your diet.
I do wish there were more/ better pictures with the recipes. Since the recipes are unique, it would be nice to know what the end results are supposed to look like.
