Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
A diverse range of authors from the Hispanic world give different rich stories with a wide range of very expressive vocabulary. They contain what might be called typical Latino expression and emotion. Some, like Talpa, can be quite graphic and disturbing, yet darkly comic. Others, like La Romeria, more light-hearted with entertaining escapist tales and descriptions of a family outing and the relationships therein. The translations are excellent, aptly selecting appropriate turns of phrase for the Spanish equivalent.
This was the first Spanish literature I read, and it was perfect for that purpose. The translations are very bare-bones, good for glancing across and getting the gist. The stories are well selected, many of them are quite good (if memory serves, this was a while ago). I highly recommend it for advanced Spanish students (I read it at the end of high school).
