A very approachable cookbook filled with healthy dishes that would be great for newer cooks or anyone seeking good ideas for easy-to-make weeknight meals. Many dishes incorporate roasted vegetables and fans of sweet potatoes, brussel sprouts, kale or cauliflower will not be disappointed.
Recipes are very well-written with lots of tips and I really liked that the author included ways to swap ingredients to make meat dishes vegetarian. The detailed cooking instruction coupled with vibrant photos of every dish result in a number of recipes spanning more than a single page. Apparently, this bothers some but if you read the entire recipe before starting (which is the #1 thing the author implores you to do) then it shouldn't be an issue.
This book is so dang pretty. You’re going to want to make many many dishes from its pages! I appreciated that each recipe said how long it would take and included pro-tips. For example, I hate having a bunch of open salsas so I was just gonna use the peach salsa I had on hand for the breakfast bowls. Erin Clarke SOMEHOW KNEW and specifically said not to use the fruit salsa there! I enjoyed eating healthy food that also tasted good all week. Thank you for the gifted copy, Avery Books! #atpinfluencers ☀️ Here’s what I made: 🍠 Sweet Potato Black Bean Quesadillas- these are filled with a tiny bit of cheese and a lot of veggies! Make sure you utilize the suggested toppings to give more flavor. 🥣 Baja Breakfast Bowls- I couldn’t believe this was the recipe my daughter picked and then I realized how smart she was- these are so good! Cheesy veggie rice with eggs and avocado? Yum! 🍌 Banana Crunch Pancakes- these didn’t live up to my expectations. Turns out granola INSIDE a pancake results in mush balls in some of your bites. Leave the granola on top or skip it altogether. 🥗 Kind-Of Cobb Salad- I could already tell this was going to be amazing because of the picture. Don’t cook the nuts as long as the book says or they’ll burn. Otherwise, such a great recipe! The eggs turned out perfect. Loved the bbq sweet potatoes. Such a delicious combo of ingredients!
This is a solid cookbook, with recipes for every day. There are photos for each recipe and the recipes are well written and easy to follow, with accurate times. My quibble here (along with the lack of nutritional information for a 'healthy' cookbook) is that the recipes are long. While this is everyday food, this is the kind of food you would eat every day if you have at least 90 minutes to sort out dinner. There are many steps, many ingredients - this is more like weekend cooking for me, though some of this is in hands off cooking time. Her dinners (pork and chicken) are highlights for me; the absolute best recipe in the book is her chocolate chip/cherry quickbread. That combination is just incredible - my family didn't even complain when I made it entirely with whole wheat flour.
She's got solid ideas, and some of these are excellent make ahead recipes too. I just thought that some were a lot of cooking for weeknights.
Unfortunately, this cookbook has a formatting issue that has caused me problems more than once. Not all the ingredients are listed on the first page. That means I occasionally miss things when making my grocery list. Hopefully, this issue will be resolved with subsequent printings.
A second collection of recipes from the blogger Erin Clarke of the healthy-eating blog "Well Plated by Erin." This collection focuses on great recipes to have in regular rotation. As with her first cookbook, Erin is really down to earth and I enjoyed reading her introductions to each recipe. The items all look good and I appreciate that there is a picture of most every recipe presented. Many of them are more involved that I would go for just myself but don't seem too much if you are cooking for a family. She gives good tips on swaps to make things more healthy. There are also tips for making things ahead and for storing leftovers. Overall, I think this is a great cookbook.
I love Erin’s recipes. They are simple, easy to read and follow. A huge plus is the ingredients are generally something that you will use. If it is an unusual ingredient for me, I can find another of her recipes that uses it. One of my favorites in this book is balsamic berry chicken thighs. I like all her hints about how you adapt the recipe to make it yours or to store and eat it on your timeline. I also love the sage brown butter acorn squash although I cut it differently than she suggests. Great cookbook with bright pictures.
I usually go for the good and trusted recipes, and what I like about "Well Plated Every Day" by Erin Clarke is that it checks off some important boxes for me: ✔️ healthy recipes ✔️ simple easy to find ingredients ✔️ quick meals
Besides, it's such a beautiful book to flip through and get inspired! Full-page color photos of easy meals are the best inspiration.
I adore her blog and first cookbook and this new one is no exception. Inventive without being too fussy. I'm pretty excited about breakfast and I don't even like breakfast that much 🤣
