Rabbi Nevins, through short essays (responsa) does an excellent job of sharing conclusions on how technology impacts our every day lives from a Jewish lens. He discusses genetically engineered foods, electronics (and how and if used on Shabbat), pandemic and end of life. It is written at a level a lay person with some background in Halacha can understand, but plenty for those with a wealth of knowledge.
