Each recipe contains a "faster" and a "slower" The fast utilizes the machine’s presets (just throw everything into your bread machine and let it work its magic), while the slower isolates the kneading and the baking functions to create bread with more developed flavor and better structure for not much extra work.

With comprehensive but easy-to-digest tips for success including measuring methods, temperature targets, machine and visual cues to look for, and opportunities for hijacking your bread machine to knead and proof dough to be baked in your oven, this is the only book you need to bring easy, fail-proof loaves to the table every day.

There are interesting recipes here, and it is a pretty book. There is a picture accompanying each bread recipe, plus some additional pictures. The book has both a table of contents and an index. Measurements are given both by volume and in grams. There is a substitutions chart. Unfortunately, not a single recipe tells you what weight setting to use on your bread machine, so you have to find a conversion chart somewhere else that is based on the amount of flour used.

Its an ok book. It doesn’t tell you what size loaf you are using so if your machine only has that you have to guess.

This book is FANTASTIC! I’ve made four different recipes (whole wheat, oatmeal buttermilk, white and tofu protein) so far. My family and I have voted all of them keepers. The tofu one is shockingly good and just like the author said, I encourage even those who don’t like tofu to try it (an extended family member who despises tofu was shocked as it just tastes like the most delicious sandwich bread but have extra protein). This is a go-to recipe book!

"Everything you need to know..." except what size loaf you are making. My machine (and most) make 1 lb, 1 1/2 lb and 2 lb loaves of bread. It would have been nice if a book dedicated to making bread in a machine would have given you that information in the recipes, so you would know what setting to use.

Very nice cookbook for experimenting with the bread machine but also for starting dough in the machine and finishing on your own oven. Looking forward to trying some of these recipes.
