Saura Kline, pastry maker and cookbook author, has filled a niche I didn’t realize existed: snacks and desserts for singletons, couples or tiny families. I only just realized that this cookbook is just what I needed. We’ve gone from a family of six to four; with one of the four on keto, we’re down to just two real sweet eaters, with my husband refusing more often than indulging. So Small Batch Baking is just perfect!

Recipes range from the simple to the more challenging, like Buttermilk Cremini Mushroom, Thyme and Gruyere Turnovers; Brie, Fig and Pine Nut Danish; and Brownie-Bottom Turtle Cheesecake Bars. Whatever your skill level, Kline has included recipes that you’ll love.

Thoughts: This is written by a pastry chef who obviously knows her stuff. My mouth was drooling as I read over some of the recipes. Alas, I can’t try any of them without serious reworking as none of the recipes are gluten free- which I am. But still… Yum.

What I liked: A lot. Each recipe is made for anywhere from 4-6 servings with the exception of cookies, which are 12. I liked the listing of essential equipment and adaptations you can use with them – like using muffin tins to make individual pies. I also liked her tips on what to do with leftover ingredients like egg yolks or whites or pumpkin purée and other things like that that happen when you’re making smaller batches. She also had tips on how to store your goodies correctly – not something a lot of cookbooks have.

The recipes are clear and concise with measurements in both volume (cups) and weight for cooks who use one or the other. Each recipe contained information on how much it made, prep and cooking times, tips, equipment needed, and ingredients. There were nice pictures at the beginning of each chapter (and a note on what that was a picture of and where the recipe was!). Nice. Finally, at the end, there was a measurement conversion chart, resources, and shopping tips.

What I didn’t like: There was only one thing I didn’t like and that’s the fact that there were no gluten free recipes. But beyond that, this is an excellent book.

Recommendation: If you are someone who wants to make just a few of something and not dozens and dozens of cookies or big batches, I would definitely get this book. It’s a really good one for making smaller batches of things. Highly recommended.

I love to bake. Or at least, I love to eat things that have been baked. But a lot of times I want a couple of cupcakes, not a whole batch. Or a piece of pie, but not the entire thing. So the baked goods wither in the kitchen, losing flavor and texture as the days go by. I hate to waste food, especially delicious food, so this is a problem. So I just don’t bake the treats in the first place. But if there were a way to bake smaller portions, that might be just what I need.

Small Batch Baking is the answer. Written by an experienced pastry chef, these recipes offer sweet and savory options for smaller amount of baked goods. Most of the recipes are created with 6 servings in mind (batches of cookies are in 12, because who eats only 1 cookie?), so the cupcakes or pies or brownies or tiramisu won’t lose their best qualities before you get a chance to eat them.

Author Saura Kline offers up recipes for Peach Streusel Muffins and Buttery Shortbread, Brioche Hamburger Buns and Cinnamon Rolls, Mini Pumpkin Pies and Chocolate Lava Cakes. There is a sweet S’Mores Layer Cake or savory Mini Bacon and Cheese Quiches.

The recipes can all be baked in pans you probably already have, either muffin tins or cake pans or sheet pans, like you would use for a normal-sized batch. But if you’re just getting started with baking, Kline offers tips for the different pans you’ll want and even how to stock your pantry with baking staples. She even gives tips for using up leftover ingredients, like buttermilk or sour cream or sweetened condensed milk.

These recipes have been created especially for these smaller batches, so you’re not trying to figure out how to use 1/3 of an egg as you try to cut down a larger recipe. These recipes are perfect as is, but they can even be doubled if you want more of halved if you want to make a micro-batch. She did all the math already and tested these recipes so they are ready for beginner or intermediate bakers.

With recipes for cakes and muffins, quiches and breads, cookies, brownies, bars, tarts, pies, biscuits, cupcakes, puddings, and pastries give you lots of options for all-day baking and eating. Each recipe includes the time needed for prep and mixing, rising, and baking, so you can plan your time accordingly; and many of the recipes also offer variations for even more flavors to try (use Earl Grey tea in a Tiramisu instead of coffee? That’s one I’ll definitely have to try out!).

With tips for getting started with baking, even beginners can learn to make the Strawberry Shortcakes with Lemon Whipped Cream, Blueberry-Thyme Turnovers, Peanut Butter Blondies, Hawaiian Potato Dinner Rolls, or Classic Yellow Cupcakes with Chocolate Fudge Frosting. Small Batch Baking may be a small cookbook, but it’s packed with 60 recipes to help you make just the amount of baked treats you want, with flavor options that ensure you’re losing nothing in flavor or enjoyment. Perfect for beginners, singles, couples, or anyone who wants to experiment with small batches of desserts to find the types of recipes you’ll like best.

Barely any pictures. Don’t bother doing a cookbook if you don’t have a photo for every recipe.

I wanted to see this book because it's just my husband and I in the household and making large recipes leaves us with so many leftovers that we do wind up throwing a lot of it out. I must say that I was pleasantly surprised by the recipes. In this book, you won't find anything 'fancy'; i.e., recipes that have odd ingredients or additions to make it sound exotic. These are recipes that will appeal to almost anyone: Strawberry cupcakes with Chocolate Cream Cheese Frosting, Cinnamon Apple Turnovers, Pumpkin Walnut Muffins, even Brioche Hamburger Buns.

These are smaller versions of recipes and make 6 cupcakes instead of 12, etc. The cinnamon rolls on the cover look especially delicious. I am glad that I discovered this, and the recipes work well, from easy to those that take a little more work (Tiramisu) but the results are delightful. I would definitely recommend this cookbook to others.

I rented the book from the library but wound up buying it because all the recipes were things that I wanted to make! Everything sounds delicious, smaller portions so not tons of leftovers. Great for small families or when your craving something sweet, but just a little bit. Can't wait to start baking!

Wish there were photos

The book was okay, nothing super exciting but nothing boring. She did a great job explaining steps to follow and tips on parts that may be difficult for some. I just don’t like there wasn’t any photos or more recipes.

Excellent small batch recipes

I love to bake and am aware that recipes can be halved to make them "small" but most recipes are not created or tested with this in mind and so ratios and bake times are just guesses. My favorite thing about this book is that the ingredients are genuine. Saura does not make substitutions or try to cut back on fat or sugar or expense to appeal to a reluctant baker. This is also a perfect book to teach my daughter real baking, besides cupcakes and sugar cookies, as the recipes & time are manageable.

I appreciate the idea of baking in small batches a lot, since I am usually one of those bakers that ends up with way more baked goods than they can eat.

And I would say it works for a large percentage of the recipes featured, but it does rely heavily (and to be fair, admits it) on having specific scaled down bakeware, which isn't an easy get internationally.

I would also have appreciated more advice on how to scale up the recipes, in case you actually wanted to do that at some point.

Great job mini desserts

I like that these are small enough batches I can do them when I get an empty nest in the next 7 years, but just enough that I can also use them for nights when I only have one or two kids in the house. I will be using this to help my daughter struggling with grams and metric measurements over the summer. My daughter who wants to be a chef when she grows up loves the clarity of instructions.

Can't wait to try these recipes

Saura seems to have broken down the recipes into easy steps that should take an uneasy Baker like me (I've never used yeast before and making caramel without burning) and trying the recipes. I've heard how hard it is to make sticky toffee pudding cake and she has one that doesn't seem pompous!
I'm sonexcited to have found this cookbook!

Written by a pastry chef, these recipes are easy to follow using common ingredients. Sometimes those of us who live with just one other don’t want—or rather, need—a full batch of cupcakes or other tasty items. These recipes are created for small batches and I’ll be revisiting many of them to make and eat.

There are only two of us at home now and I have not been baking much. It is just so much work to decrease recipes and have them come out right. So this book is a blessing. It is easy to read and follow the recipes. The ingredients that you have in your refrigerator and pantry. Impatiently waiting to try some of the mouth watering recipes.

Way Over My Head!

My first clue should have been baking in the title, but I felt adventurous and downloaded the book. The recipes all sound delicious. However, I’m a girl who has trouble boiling water so any recipe that requires me to do more than pull crescent rolls out of the package - yup - like I said - way over my head. Others who cook will love the variety and selection.

Sounds Heavenly

I love to bake. When I saw this book I knew it was for me. I just finished reading through the recipes and am ready to bake. The only problem is: what to try first! 😂😂 They all sound delicious! I love the way the author makes you feel like you are her equal, even though she is a pastry chef and I am not! She is a winner in my book, as is her book!

I was excited to get this book since I need smaller portions on recipes. But most of the measurements in this book are off. It’s like they didn’t have an editor. I do not recommend this book it’s a waste of money if you have to alter every measurement listed to get the recipe to turn out right. Sometimes I even have to double it just to produce the serving amount they say the recipe is for.

Great book

Will try many of these recipes. Baking is a fun hobby but as empty nesters we can only eat so much. This book will help me bake what we can eat soon. I do like to bake and freeze for busy days and these recipes sound very yummy.

When the kiddos are gone...... and just you and your hubby and cooking all the normal size I used to - I don't want the calories! this is soo nice to have to be able to use and make smaller, quality fun things!

Fantastic Book

I have been in love with this book for a very long time but couldn't afford it, then it went on sale wow. I have wanted the experience for cooking for two, this one has it all for small batching games cakes, muffins and all other delicious goodness.

Many of the recipes sound great. Nothing here is overly complicated. A great collection of recipes. Definitely worth reading for anyone interested in baking.

Small Batch Baking

Love this book. I love to bake! But since my family has become smaller, I hate the waste of bake goods. This book has just what I need to make delicious desserts and not have the waste. Are the extra calories we don't need.

Enjoyed reading

The recipes are well organized, and easy to read and follow.
Simple ingredients. Lots of good ideas from breads, to cakes, to hand Pies.
Can't wait to try some of these ideas. The food looks yummy!

Perfect for two

The portions are great for 2 to 4 people. It took the math and guess work out for me and made it easy. I wish it as options to use store bought crusts and ten add to it. Sometimes I don't want to make my own. Overall pleased with the recipes and book.
