Another social media influencer has a cookbook. The recipes are average and most home cooks should be able to prepare them. Most recipes have a photo. If you are a fan of Edith’s or need a decent Mexican-ish cookbook, you might want to add this to your cookbook shelf.

Edith Galvez got into cooking as a way to manage her postpartum depression and anxiety. Her husband introduced her to ASMR videos as another way to calm down and she decided, as a shy person, she could share her cooking through ASMR herself. This turned out to be great for her Spanish-speaking audience because they could learn her recipes visually. She quickly became a TikTok sensation and now she’s got her own cookbook of family recipes. I liked almost everything I made! However, I was a bit frustrated because I felt whoever made and staged her food for the book did not follow the recipes (they had to have modified ingredients and/or quantities to make the food more visually appealing) and I think for many beginning cooks, they’d feel they did something wrong and would be discouraged. Here’s what I made:
🍋 Lemon Blueberry Loaf Cake- the glaze recipe is 100% incorrect. As written, you’ll still essentially have lemon juice! Add 4 times as much powdered sugar if you try this one. The cake is good though.
🧀 Sopa de Queso con Papas- this blew my mind. Somehow this soup tastes EXACTLY like Zuppa Toscana from Olive Garden. Queso panela plus the heat from poblanos felt like sausage? Just try it.
🍗 Chicken with Alfredo Pasta- this sauce is loaded with butter (that was used to cook chicken) and spices so there’s no way you’re gonna get a normal looking Alfredo sauce like in the book. And with 8 oz of cream cheese in addition to heavy cream, it is super heavy and rich.
🐷 My Mom’s Ham and Cheese Spaghetti- holy this was so good. Reminded me of my own mom’s ham casserole. I did not want to stop eating it!
🥔 Potato Wedges- my request here would be a weight instead of number of potatoes because they ended up over-seasoned. There’s definite potential though and I’m sure I’ll try again with some modifications.
