Rummaging through my stuffed freezer, I found bags of grains that I never previously had time to use in cooking. But now that I'm working at home, I do have the time! So, I got out Pure Prairie, a cookbook that I bought one time when I was visiting Kansas City. From amaranth to wheat berries, it has recipes for many grains. The author, Judith Fertig, is talented at evoking the flavors of the Midwest, with witty names for her dishes like "Flyover Country Confit" and "Wave the Wheat Salad." Cooking was getting to be a drudgery during these pandemic times, but now I'm excited and looking forward to it again!
