When we look at many Mediterranean people, it is easy to see their beauty. I do not mean the classic physical characteristics that the media has told us equates with beauty. I mean the beauty of health: robustness, strength, confidence and an aura of sunshine. This is produced by proper nutrition and what better way to emulate it than to follow their diet? Patrick Smith’s Mediterranean Cookbook gives us the map, with lots of details, to attain this state. Whether vegetarian or not, there is something for everyone. I have already tried several recipes. Mediterranean Yogurt was first since Greek yogurt is now available in supermarkets. It is tastier than its American counterpart because much of the lactose sugars, salt and water are strained out, leaving a creamier texture with more protein. Next was Classic Mediterranean Pizza, never thinking I would like anything called “pizza” with feta cheese, but it is delicious. There are so many other interesting meals to look forward to tasting because of the inclusion of seeds, nuts and olive oil. Having read another Patrick Smith book, I enjoy his no-nonsense way of presenting the facts and food without frills. I find it fun to prop my kindle on the counter and follow his recipes as easily as possible. What a splendid way to create, eat and remain healthy!
