Louise Davidson’s “Forgotten Soup Recipes: Old-Fashioned Vintage Soups That Are Still Amazing Today!” Is really a nice book for soup lovers. One of the things that I love about this book is that there is a photograph for every single recipe.
Although I haven’t (yet!) made one of these recipes, the images in the book made me SO hungry that while I was reading, I had to make one of my all time favorites from my graduate school era—Ghanian Peanut Butter Soup with Rice Balls.
This book, while short, did provide a lot of truly forgotten soups. In fact, there were several soups that I"d never even heard of, like Lettuce Soup for example. The author also included numerous cream soups. While some soups like Cream of Mushroom people still eat regularly, others like Cream of Almond, Creamy Carrot, and Celeriac Soup are eaten less.
The recipes in this book focus primarily on Americana soups. However, Davidson does include a numerous cream of ethnic soups as well: Native American soups include Buffalo Soup, Acorn Soup, and Duck and Wild Rice Soup; Jewish soups like Matzo Ball Soup; and Mulligatawny Soup, an Indo-British soup.
I was surprised that the author only included a single recipe for bread soup, but there are so many of them I can see why she limited it to one. Readers can find old recipes like Mock Turtle Soup that uses veal, along with a host of cold soups. She even included a Cooking Conversion Chart at the back.
This book has good instructions and great images, and while the book isn’t a comprehensive recipe book on **all** forgotten soups, Davidson does offer an amazing subsection of them.
Lots of those dishes Grandma and Mom used to make, basic standards from our younger days. Hit one of these recipes occasionally - brings back old times, old friends, old dinners.
My mother was a great cook who made fantastic soups. This book opened the door to my childhood by giving me the recipes which I can now make those same soups to enjoy now. It also contains really good broths recipes for rich bases for these soups.
