ARISTEDES PASPARAKIS became Canada’s first name in Greek cuisine when he opened Orestes in Vancouver 30 years ago. Other restaurants in Vancouver, Calgary and Toronto followed—including Ouzeri, which revolutionized Toronto’s Greek restaurant scene forever. He subsequently opened restaurants in London, Los Angeles and Athens.

HE IS KNOWN SIMPLY AS "ARISTEDES," Canada's first name in Greek cuisine.

his style was to just to blend sauces and only add it at the end of cooking, and add raw oil

and use two non stick pans without oil, for cooking the meats, so it was crisp on the outside and tender on the inside, and way too much oil which gets flavorless at the end

moving away from meat that's well done like a rock, and other things mushy with olive oil

so raw olive oil at the end
lots of lemon, less salt
