One of the biggest ways a university could not prepare a teacher is in keeping them updated on technology, pedagogy, and relevance. What some schools lack could easily be found in The Relevant Educator by Steven Anderson & Tom Whitby. Being an ELT in China, I found this book to be of vital information related to the tech plan (possibly BYOD) that I'm starting up at our school. The most important resource, my Twitter PLN, has supported and encouraged me. But inside these pages are many more resources that any teacher would find enlightening, to say the least. The Corwin CE Series is unbelievable, and I would strongly recommend any teacher new to the field or technology implementation pick this up and look into the resources the authors have provided.

I read this book as part of a book study for Teachers First/OK2Ask. I have heard both of the authors speak before. This would be a great starting point for many teachers. With a copyright date of 2014, there are a few things in the book that are now obsolete.
