Great book! I love how he lays out the dough schedules, weighing ingredients, and I have a better understanding of baker’s percentages.

there is so much information about bread here that i didn’t ever think about and i am so excited to start my bread era. i don’t even have to make any recipies yet to know it will be 5 stars purely from the information that i have already got from it. update: i have made so many things in this book already and it is an absolute gem and has turned me from a nervous bread maker into a more confident bread connoisseur

Great book. Detailed instructions for each step in the process for making sourdough bread and other baked goods.
