I first learned of Stella Drivas' Hungry Happens recipes watching Facebook Reels. My first favorite was her 5 Ingredient Greek Yogurt Bread (No Yeast + No Knead); I've lost count of how many loaves we've made. My husband and I make the dishes together, and he always grumbles and grouses the first time we make something. Funny thing, once we start eating the dish he changes his tune.

After Reels, I found her Hungry Happens website and started collecting more recipes. We have a few favorites, especially the one-pot meals. I signed up for her newsletter. Yay! More recipes to try. Then I got the email announcing her cookbook was up for pre-order. I don't think I have to tell you what I did.

Hungry Happens: Mediterranean: 100 Healthy, Simple Recipes: A Cookbook arrived yesterday. After baking a loaf of our favorite yogurt bread, we made Creamy Zucchini & White Bean Soup. It was delish!

Hungry Happens: Mediterranean: 100 Healthy, Simple Recipes Is a beautiful hardcover cookbook that lies flat when opened which makes following the recipe that much easier. As I turned the pages, I found several that I earmarked because they sounded like food we both would enjoy. One of the marked recipes that we have tried a couple of times is Euro Tortellini Salad. Mwah! I will tantalize you with the oh so good recipe for the salad dressing:

6 Tbsp Olive Oil
3 Tbsp Red Wine Vinegar
2 Tbsp Honey or Maple Syrup (I used sugar free pancake syrup)
1 Tsp Dijon Mustard
1 Garlic Clove Minced
1/2 Tsp Dried Oregano
Fine Sea Salt and Freshly Ground Pepper

Make the dressing in a small bowl or screw-top jar. Combine all ingredients and shake or whisk until combined. Taste and add more seasonings as needed.

If you want to have healthy meals with options for vegetarians, alternative flours and sugars, gluten free and more, you owe it to yourself to check out this cookbook.

When I first opened up the book you have a table of contents that includes some great categories: Mornings Sunset Mezze, Carb light, Sweet Spot and so much more. As you continue through the book you will find Drivas introduction (Love Your Life), which explains how this cookbook came to be. You then move on to her pantry lists, My Greek Pantry, My Health-Forward Pantry followed by her “Eight Rules for Better Everyday Cooking. She mentions reading the recipe fully before you start, always cook the food to temperature of food not time, and six more. Then I went into the amazing recipes and tried quite a few to see how easy they were to follow and to have the ingredients on hand. I started with Cocoa Dutch Baby, followed with Gardipetoules (Shrimp Fritters), continued with One-Pan Chicken Orzo and rounded out the cookbook with Chili-Lime Shrimp. I found the recipes easy to follow and for the most part ingredients were easy to find in your pantry or in a grocery store. I would highly recommend this book be added to your cookbook selection. Excellent book full of fresh, flavorful Greek-inspired recipes. Lots of modern fusion. I found at least 8-10 recipes I wanted to try & for me that makes the book a winner. My only criticism is that the author doesn't eat much. In the intro, she said breakfast is bone broth, lunch is a hard boiled egg & raw veggies. So, as you can imagine, those recipes are few. Mainly, the recipes are for family dinners & entertaining.

I've followed this vlog for several years now. This book was bright, beautifully photographed and filled with recipes I haven't tried yet. Im looking forward to trying several recipes in the next week. I've just written out my shopping list.

So many great choices and lots of variations to recipes listed, as well as good, common-sense advice.
Simplifies complex recipes like Moussaka and offers healthy alternatives.
