The world of competitive BBQ is full of a bunch of really nice folks who are dead serious about putting out top shelf barbecue. Most of them will give you the shirt off their back if it'll help you out, but if you start asking about their cooking secrets...let's just say you shouldn't expect it to end well. This isn't another book about grilling. Cooking on a pit and grilling a burger aren't the same thing. This is about a fire, smoke, and time - not grilling veggies and hot dogs. A lot of 'barbecue' books are really about grilling, or if they are about pit smoking they only offer a lot of vague generalities and ways to convert your kettle grill into a makeshift smoker. In contrast, this cuts the fluff and takes you step by step through prepping and smoking competition worthy brisket.

Great book ... Thanks for sharing

I thoroughly enjoyed reading your approach for brisket. I like the Texas approach ..simple. But for the one I have done ... It was hard to wait through the stall. And I need to understand the wrap. I will be using your method on my next brisket

Good Instruction

The book was right on the money what he described there happened in my smoker including the plateau of the temps if you do exactly what the book says you will be amazed at the uncanny ability of times and temps it was like he was here doing it. I had trouble finding the butcher paper but settled for a paper bag and worked I can't say it worked as well as I've still not been able to find the paper. I would recommend this book to any beginner it makes you genuinely look like you know what your doing, the most difficult thing I had to deal with is making it look like I was on Facebook on my phone instead of getting back to he right page in he book.

I was hoping for a slow way to smoke

As a beginner there are too many options
To choose from not sure now , I'll read more books beforehand.

Decent summary

Covers all the basics. Nothing surprising or unique, but supplies a good summary. Needs a good deal of editing, though.
