During the 60s and 70s, Elise Boulding was one of the most beloved professors at the University of Colorado, Boulder campus. This is a cookbook with simple, sustaining recipes, but it is more than that. With the artwork, poetry and quotations that surround each recipe, it is more of a reflection of her philosophy. There is nothing new here with respect to recipes, but there is a lot to reflect upon.
