I have never been one for crockpot vegetables but this book surprised me. The first recipe I saw and tried was "Sweet Potatoe Mash". I LOVE sweet potatoes so I decided to try it out. I started with only one sweet potato in case it didn't turn out and I omitted the pecans as I can't chew them even if they are cooked.

This was indescribably delicious! So, I took out all of the one potato mixture and ate it, and then immediately cooked the rest of the two pounds of sweet potatoes I had bought. I prudently put half of the mixture from the recipe into freezer bags for later on in the month.

The next "experiment" will be the "corn casserole" as it sounds absolutely scrumptious. Not sure when that will be but I don't think it's going to be too far in the future. :)

Other recipes listed are:
Broccoli Cheese Soup
Corn on the Cob
Mashed potatoes
Butternut squash
Creamed spinach (definitely on my list to try)
Baked Beans
Collard Greens
Cheesy Broccoli
Refried beans
Caramelized onions (on my list to try)
Creamy tomato soup
Minestrone soup
Vegetarian chili
Cheesy vegetable soup (on my list to try)
Mexican casserole
Stuffed peppers

And many more.

Best part: as of today (and for how long I don't know) this book is free from Kindle/Amazon. I would have been willing to pay for it, the recipe appear to be that good!

Helpful vegetarian recipes

I love using my crockpot to make exotic vegetarian dishes with rich, deep flavors. There are some healthy recipes in this little book that sound good. The squash and apple with cranberries l will be trying first since l have the ingredients on hand. Some recipes will need improvising since l don't like processed can soup and also use lots of spices, freely. I bookmarked several that l want to try. A recipe using vegetarian sausage is another since l just bought a fresh tube. This would be a good starter book for those wanting to join the crockpot clan.

Sounds Good to Me

I judge an ebook cookbook by how many recipes I bookmark. I bookmarked all but one of these,,and that one I didn't mark because I wouldn't get my husband to taste it. I'm sure I would like it, but cooking for only myself gets boring after a while.
Recommended for all cooks or would-be cooks.

Great book, quick read

This is a great cook book, quick read, could be very helpful for new cooks, but I’ve been cooking since I was 7 so I’m just looking for new recipes, this book gave me a few recipe ideas, and I found a few recipes for soups, and a butternut squash and apple recipe that I’m going to roast instead of using the crockpot, overall I enjoyed the book

Pretty good

I thought this might have been a book that my grandmother had spoken of. I'm searching for a specific recipe. It's just not exactly what I was looking for, but still good.

Wonderful! Looking recipes

I love vegetables and I love the ease of meal prep in a crock pot. These recipes combine it both. In addition the recipes call for ingredients that are generally available in most supermarkets. I can hardly wait to try them!
