'Just because these recipes are super speedy and full of protein, I haven't compromised on flavour. I want to show just what's possible with a little bit of kitchen creativity.' Sophie Macfie
Excellent cookbook if you're trying to eat more plant based, protein- & fibre-forward meals. Spoiler alert: tofu, tempeh and beans are doing the heavy lifting here, as they should be! I like the focus on whole foods rather than "fake meats" etc. The ingredients are easily accessible, affordable, and Sophie includes a helpful summary of common ingredients/shopping list items for those less familiar with some of the usual plant-based diet staples. Helpfully each recipe has the time it will take noted on the side, and so far I've found the indications accurate, even on the generous side! (Which, if you're like me and have the experience of spending 3 hours on a recipe supposed to take 90mins, you will greatly appreciate....!)
I got the book about a week ago and already made a bunch of recipes/have a whole lot more bookmarked to make imminently. I can see myself getting plenty of use out of it, for midweek cooking especially, as I'm trying to skew my diet more towards plant-based, wholesome food. And I may even be tempted by the sweet treats!
It’s hard to find high-protein, vegan recipes that also taste good, but Sophie did that with her first book and I’m very excited about cooking my way through this book as well. The background information she includes is an added bonus.
