Pros: this bread was impressive and delicious!

Cons: omg this dough requires so much attention. Rest, pre shape, rest, shape, rest, etc.

I have been doing artisan bread in 5 minutes a day and the Jim Lahey no knead bread. This bread is really wonderful and lovely but it’s really for those people with time to burn. 4 stars for being delicious and not hard to follow if you’re ok at baking and following directions. Plus, I like that it makes multiple baguettes in one go (hello holiday gifts!). However, I am not likely to use this again because while it is better than my other go-tos, it’s not better enough to make the effort worth it. (Note: I just did the one main full-on recipe and not the complications/other 10 doughs).

Made whole wheat sourdough.

A few out-of-the-ordinary things about this book: starter calls for raisins (different!), and most directions call for mixing dough with your hands rather than a dough hook or a spoon or whatever. Not bad, just different to me at least.

Wasn't really feeling the conceit of the book--that is, one basic dough that makes ten different breads--but there's nothing wrong with the basic recipes and the photos and directions all seemed pretty clear.

Sarah Black brought ciabatta to NYC. A must read for anyone who loves good home-baked bread. Concise and easy-to-follow recipes, along with beautiful photography, makes this a book you'll want on your shelf.

Whether it be digging in the dirt with bare hands, building pinch pots or throwing on a wheel or, in this case, baking bread - there is just something primal about using your hands to do a bit of dirty work... to physically connect & be covered in & with your work.
I looked at several "first bread books" before settling on this one. It is well written, which is to say, for a cook book, if you follow the recipes as written said recipe will bear a passing resemblance to that which you were attempting. The more skill you have in the kitchen, the closer to bullseye you'll get. Even if you never went past the first recipe you could say you know how to make a loaf of bred from scratch. You may find, as I did, that it is not only cheaper & better tasting than store bought, it's a heck of a lot more fun too.

I think it should be made clear, this is a hands-on primer for bread baking in an artisan style. Not as the title might lead one to believe, a book like "bread in five minutes" where one makes a big tub of dough for the week and bakes off loaves. That being clarified, I liked it so much I plan to return my library copy, and buy one to use as a guide for bread baking to work through with my kids.

The basics and more

Lots of great tips and clear instructions make this book one that should be on every bread baking enthusiast's bookshelf. I highly recommend this if you're a beginner but also for the more experienced baker.

Very sophisticated and artistic writing. Beautiful photography that made me hungry just looking at dough. Beautiful and I don’t even make bread.
