Before reading this book I had not considered canning dry beans. I didn't think that there could be an up side to it. With having read it I now wish I had been curious about canning dry beans sooner. I turned 65 this year and have canned meats, vegetables, fruits, soups, etc., but never dried beans. The tips, recipes and interesting stories helped to encourage me to give them a try. I also have enjoyed some of her other "I CAN CAN ..." books.
It seems weird to say you love a book about canning beans. But it is a great book and just what I was looking for. I have never found an easier way to cook beans in a short amount of time. Check out her other canning books too. I going canning crazy. But that's a good thing.
Great Bean recipes and an interesting and logical canning process
I love the dry bean canning process and the stories. I wish the pictures were bigger but impressed that th book even had them...most republished books don't have them.
