I am diabetic and recently went off of insulin due to cost. So now trying to control it with diet, so I am looking for any cookbooks that promote healthy eating. So when I was offered Healthy Cookbook for Two, I was happy to accept. In this cookbook, there is advice for shopping and meal planning, suggestions for delicious side dishes, tips to sustain a healthy lifestyle and nutritious information for each recipe. I liked that each recipe had easy to follow recipes and what each category each recipe falls under, such as gluten free dairy free and one pot. Oh yes, the fact that the recipes are for two is perfect as there is just hubby and me in the house! What I make he eats!!! Some of the recipes are Pasta Primavera, Turkey Meatloaf, Turkey Bolognese, Classic Minestrone. Hubby has a sweet tooth and he askes me when he comes home from work if I baked anything. So the Dessert section had to be looked at. There is Apple Cranberry Crumble, Fruit Tarts and even Speedy Strawberry Ice Cream. I can see getting a lot of use out of this cookbook!

I deducted a star, because there are no photos of the recipes. Hopefully an update will correct this. That said, I will be trying a lot if these dishes, for my spouse and I.

I found quite a few recipes in this book that I want to try. There are a lot of more complicated recipes but I prefer the more simple ones and was pleasantly surprised by the selection of those too. Most of the recipes use simple ingredients that are easily obtained and many of them are standard fare in most kitchens. I am a widow trying to eat in a more healthful manner and there were some excellent meals featured.
Surprising number of recipes that I would actually make! I appreciate that there is a wide variety of flavors and recipe types but not an excessive number of difficult-to-source or expensive ingredients.
Bought on amazon when looking for new, simple recipes for the two of us to eat. Both are diabetic and this looked promising. It has some that look appealing, I haven't used yet since just received. Photos and tips. Not sure I would consider this worth the full price.
I received the Healthy Cookbook for Two free for my review. This cookbook is great for those who want to save not only time but money by not wasting leftover food from cooking too much! I like how it completely explains how to make a meal plan step by step. How to buy the right ingredients and how to store everything that you will need! One of my biggest issues is not having enough time to make a healthy meal, so I find myself reaching for the mac and cheese and hot dogs, which are unhealthy but quick and easy. Now with this cookbook I don't have to do that. It gives you a detailed explanation of how to prepare the meals, make shopping lists, different cooking techniques, what utensils to use and even how to use leftovers incorporated into other meals! Which is a wonderful time saver! With over 150 recipes in the Healthy Cookbook for Two, you will find many healthy, quick making recipes that wont hurt the budget. My favorite so far is the Lemon Poached Salmon!
I would recommend this cookbook for anyone who doesn't have a lot of time and doesn't want to cook a huge meal for only a few people. This cookbook would also be great for the family as you can double the healthy recipes to make for more people!

As we have recently become empty nesters it has been tough downsizing a meal that I am accustomed to making for 5. We also have agreed that we both need to start eating much healthier, especially as we age. The Healthy Cookbook for Two by Rockridge Press is so full of information and packed with mouthwatering recipes; my favorite is the Chicken Broccoli Casserole. Also has a wonderful section on vegetables which is convenient as we have a vegetable and herb garden. It gives detailed explanations of how to make a shopping list, step by step instructions on how to prepare the meal with fresh, affordable ingredients and how to incorporate any leftovers into another meal. The recipes are quick and simple to make and easy on the budget. It gives tips on choosing the proper ingredients and how to properly store them. It is amazing how delicious, healthy and perfectly sized our meals have become since using this book. I highly recommend this cookbook to anyone ready to transition to a healthier diet or would also make the perfect bridal gift. I received this item for free to evaluate. There are only two of us in my household and we are always looking for healthy options. But cooking for just one or two people is sometime difficult to do without creating a lot of waste. This book is great because it gives a lot of details and breakdown for recipes and the correct amount of ingredients to use so there is no waste. Which is extremely cost effective. This book also has gluten and diary free recipe options, which is really helpful as we try to avoid diary as much as possible.

This is a great book. It has many great tips on meal planning and money saving tips. There are so many great recipes. There are some easy delicious recipes, such as the creamy baked eggs (or shirred eggs). Recipes that require a little more work, such as ratatoulli. And then the desserts, like velvety chocolate pudding. I can't wait to work my way through this book.
This book talks a lot about thinking ahead. Meal preparation and planning, well executed meals to save you time. How to double prep ingredients, have what you need in advance, use the same ingredients in more than one meal. I love the tips for buying and making groceries last section. The recipes were ehhhh...Most didn't look like something I would try to make.
I had the opportunity to grab this book at the discounted price. Unlike another one that I loved when I was able to do this, on this one, I felt like I got what I paid for. I think there were recipes that I could count on two hands that I would make and the rest was a bunch of fluff writing about how to downsize recipes/cooking. It was ok...not great and happy I didn't pay the full amount.
