The Ultimate Jerky Cookbook: How to Make Beef Jerky, Venison, Poultry, Fish & Game: Dehydrator, Oven & Smoker Drying Methods for Healthy, High-Protein ... & Beyond
I’m an experienced jerky maker, and just wanted some new recipe ideas. And this book absolutely delivers. The BBQ Maple was fabulous. The Moroccan Spice Trail was not for me - but I appreciated the opportunity to try something unique that I wouldn’t find in a traditional American market. That’s why I make my own jerky so I can experience flavors that I typically wouldn’t find in the store. The downside of this book, is that if you are a beginner, I don’t think it has enough instructions. There are only 2 introductory pages before you get to the recipes. From a formatting perspective, some of the recipes feel cluttered and repetitive with material that in my opinion should of been in the introduction. For example, almost every recipe says “slice the meat against the grain.” Which is absolutely vital instruction, but the author could of saved so much time and space if they had included some basic preparation instruction in the introduction, instead of repeating the same phrases for each recipe. But overall, this is a solid recipe book that I recommend.
I was excited to try this jerky cookbook because it promises a lot: meat, fish, game, 3 drying methods. The layout feels practical and approachable — the recipes are clean and the ingredient lists manageable. If you’re just starting to make jerky at home, this gives you a strong foundation.
That said, it doesn’t feel groundbreaking. Here show mostly standard recipes and methods that many jerky hobbyists already know or can find online. The “beyond” in “Beginners & Beyond” seems a little optimistic — I’d like to see more on troubleshooting, advanced techniques, or unusual meats. Also, safety tips are mentioned, which is good, but the preview doesn’t show enough depth in food science or preservation.
Overall: useful, friendly, and practical. Good for a home cook wanting to try jerky — but serious jerky makers or professionals may find it a bit shallow.
I’ve tried a few jerky books, but this one’s honestly my favorite. It’s super clear, no fluff, and the recipes work. I liked that it covers everything—beef, venison, poultry, even fish—and explains both oven and dehydrator methods. The marinades are flavorful without being fussy, and the author actually gives useful safety tips (which a lot of books skip). If I had to nitpick, I wish there were more photos, but the step-by-step instructions make up for it. Great for beginners or anyone who wants to up their jerky game.
