Brilliant photographs and good historical overview, by no means in-depth for each spice but a good start to see the spectrum of spices and their story. Written from a French perspective, the recipes are drawn from separate Chef authors with truly authentic recipes.

For example, "Risotto alla Milanese" is a classic saffron rice risotto, but the recipe here *is* the real one, where the oft-missing raw bone marrow is included. A treasure of a resource.

The spice buyers section is, of course, completely out of date, but the message is clear: buy spices from people that care about quality.
