I prefer/usually eat vegetarian, but my husband often rolls his eyes when I pick/cook a tofu or bean-based meal. But after flipping through this cookbook, he's the one picking and cooking recipes from it. Every recipe we've had is truly delicious (and easy to understand) + he loves that it has the macros listed. I feel like there's a recipe for every kind of food mood I'm in (from preppable breakfasts and salads to mac and cheese and high protein dirt cups)!! The cookbook itself is gorgeous and the directions are so easy to understand. If you're a vegetarian looking for more meal ideas, trying to eat less meat, or just looking for a quality cookbook - I would definitely recommend!!

Great cookbook for anyone trying to eat more veggies! Even if you’re not a vegetarian yourself, you may want to cook for friends and relatives who are. These recipes are easy to follow and the results are tasty and satisfying, even for the meat eaters…

The most important thing to know about this book is that it covers all bases - the experienced vegetarian looking for more recipes to add to the lineup, the vegetarian looking for more protein based meals, the sometimes vegetarian looking for healthy recipes, the wanna-be vegetarian looking for a place to start and all of us looking for less expensive alternatives to high priced meat.
The author begins by explaining how much healthier vegetable based protein sources are and helpfully providing a long list of protein sources - even providing her list of go to brand name products that she keeps on hand. This is so illuminating because non vegetarians often only think of meat as a protein source.
The book is laid out in sections featuring breakfast, lunch, snacks, dinner and dessert. Each section in turn has subsections like “in the moment”, “make ahead”, “pasta”, and “from the oven”
The ingredients are familiar to the vegetarian and non-vegetarian alike and they are typically on hand or easily available in the grocery store. The recipes are easy to follow, give nutritional information and are accompanied by beautiful color photos. The book lies flat on the counter.
With meat prices so high, Protein-Packed Vegetarian is the cookbook we all need.

Elkus “Protein-Packed Vegetarian Cookbook is easy to read, has vivid and enticing photographs for her recipes. She has included a table of contents: (Breakfast, Lunch, Snacks, Dinner & Dessert), Introduction (which explains when and how she became a vegetarian and the importance of protein), Getting Started includes Vegetarian Protein Sources, Vegetarian Staples, Grocery list, Protein Powders and Kitchen tools. I had so much fun trying some Elkus recipes such as: Homemade Toaster Waffles, Crispy Cheese Egg in a Hole, How to Build a Protein Bento Boxes, Macaroni and Cheese, Sheet Pan Summer Veggie Parmesan, Cheesy Stuffed Spaghetti Squash Rings, Pumpkin Cheesecake Cups and Protein Dirt Cups. Each recipe was easy to read and make, ingredients that you can find in any grocery stores and were delicious. At the end of the book Elkus provides an example of a menu for day for each season. I would highly recommend this book to anyone whether you are a vegetarian or not. A great book for your bookshelf. Did I create a goodreads account just so I could write this review? Yes, because that’s how much this book has meant to me. 12 years ago I became a vegetarian. I’ve been searching for a book like this every day since. 10 years ago I started strength training and tracking my macronutrients. I aimed to consume 1 gram of protein per pound of body weight each day but was finding this nearly impossible to do as a vegetarian. The only times I came even close to meeting my goal were when I forced myself to eat seitan (not my fave), plain Greek yogurt, and plain cottage cheese. It got old. Fast. I wasn’t enjoying what I ate, I was only eating to gain muscle, lose fat, and become stronger. This book has shown me that it’s possible to do both, to love what you eat and also meet or exceed your fitness and nutrition goals. And even better, the recipes don’t have to be complicated. I wish this book was around when I started my fitness journey 10 years ago. I’m grateful it exists now.

This books packs a punch! Glad to have a group of recipe that can get my growing family the protein it needs while also using fresh ingredients. We made the Tortellini Soup with White Beans and Greens and it was easy and delicious, even my toddlers enjoyed it. I'm excited to dip my toe into the desserts which are also protein based. The guide at the bottom of each recipe helps you realize the protein you are getting from each meal. It can be difficult as a vegetarian to feel like you are getting the protein you need, I'm glad to have a current book that addresses this. what a great cookbook! i borrowed it and read it on my kindle and copied down 17 recipes to try. i think that's an all time record for me. grace's book is filled with easy recipes, ingredients that most home cooks/vegetarians have in their pantry and fridge already. there's nothing unusual or exotic in here but that's part of the charm. it's real. i totally recommend this lovely book. grace's light shines through.

I’m not a vegetarian but this book was still filled with recipes I wanted to make. Easy, filling, and so creative! Normally feels like vegetarian recipes rely on alternative meats, but Elkus came up with a ton of delicious ways to meet protein goals with everyday ingredients. Also, every recipe has a PHOTO — normalize this in cookbooks!!

So delicious! This is the perfect book for anyone on their health journey. The recipes are creative and and innovative. I love how it's divided into breakfast, lunch, dinner, snacks., and dessert. The peach caprese white bean salad is out of this world. Clarkson Potter provided me with a free copy of the book, but the opinions are all my own.

This book is BEAUTIFUL, both the content and the photography. I love that every recipe has a photo, and the recipes are created to be so user friendly. It can be so challenging to find vegetarian recipes that have protein and this book does the heavy lifting for you! I definitely recommend and I can’t wait to be cooking my way through this book.

Great cookbook using vegetarian (lots of dairy) to maximize protein intake. Good balance of recipes it may take you awhile to put together as well as easier choices.
