Eating Purely is a collection of Elizabeth’s favorite recipes, which she has made for family, clients, and friends over the years. The recipes are healthy, easy, and delicious—and at times even indulgent. Eating Purely is focused on cooking with whole foods that are naturally gluten-free, nutrient rich, free of refined sugar, and mostly vegetable based.

These recipes are centered on Stein’s five Eating Purely Principles, which will leave you feeling healthy and purely radiant. These principles eat whole, clean foods; focus on Plants; add in nutrient-rich ingredients; kick inflammatory foods to the curb; and practice the 80/20 rule. Chapters salads, veggie mains, fish and poultry, desserts, drinks, bunch, and more!

Throughout Eating Purely , Stein shares personal stories on health, exercise, family, entertaining, and starting her own natural foods company. Interwoven throughout the book is what Stein calls “the purely scoop”—time-saving cooking tips, benefits of ingredients used, resources for buying foods, and food and wine pairings.

I was really hopeful about the recipes after reading the introduction and Chapter 1: Eating Purely Principles, because I already live by the 5 principles outlined. They are: 1. Eat Whole, Clean Foods 2. Focus on Plants 3. Kick Inflammatory Foods to the Curb 4. Add in Nutrient-Rich Ingredients 5. Practice the 80/20 Rule. However, I was less excited when I actually got into the recipe section because the author frequently uses uncommon gourmet ingredients. Even common ingredients like Kale, potatoes, and tomato sauce are prefaced with specific adjectives unknown to the common cook. So if you're a common cook like me then you may not like this book very much. If you enjoy delving into the realm of gourmet cooking then this book may be just for you.

More of an extended commercial for her food line than a cookbook. And oddly, none of her recipes include nutritional information.

I love this cookbook! Simple, healthy, easy to follow recipes with very few ingredients. I have made several recipes and especially enjoyed the bean and beet burgers, spaghetti squash, and pistachio encrusted salmon. Her recipe for pesto has become my go - to.

Recipes

I felt the recipes were not interesting. I would have enjoyed recipes with more traditional ingredients. I do believe in the book's philosophy and do eat cleanly and cook from scratch, but was looking for easier everyday recipes.

I like her approach to healthy eating with good recipes (I've tried a couple and they are great!) without going insane :) I checked out this book from the library but thinking about buying it to keep on my kitchen shelf.

Looking forward to making some of these desserts this fall! Very interested in the vegan alternatives for cheese and frosting that are in this cookbook as well.

disappointed

Many of the recipes used her brand of cereal or boxed mixes with no suggested substitutions. I’m glad I bought it on sale instead of paying full price. I haven’t made any of the recipes in the book and doubt that I will. Many contained ingredients that I am not able to get. Also, I thought pure would mean staying away from meat products, but there are a lot of recipes using either fish or poultry. If you are living on a limited income, I would recommend you skip.
