There is a surge of interest in Irish cooking in the United States, coupled with a rising number of restaurants which serve Irish or Irish-influenced food. Barker's little cookbook provides just the sort of recipes one might expect for the most common Irish-American dishes: Irish Soda Bread, Irish Stew, Dublin Coddle, Concannon and Gooseberry Fool. The recipes are straightforward and easy to follow. This book would have been greatly improved by greater attention to the lore of Irish cooking, to genuine Irish ingredients and reasonable substitutes therefore, and to the place of many of these foods in Irish culture. I continue to search for a go-to Irish cookbook which meets all of these needs.
