Turkish Cuisine in Historical Perspective

Deniz Gürsoy commenced this study with the aim of examining how, over time, our food culture has undergone changes in the geography where ancestors formerly lived. He directed his attention to the foodstuffs, the fundamental components of the cuisine and then investigated the story of the food of the peoples who had occupied our geography before us. He examined regional influences and confined his research to the area delimited by the geographical frontiers.

About the author

1949 yılında İstanbul'da doğdu. 1968'de Robert Academy'yi, 1972'de Boğaziçi Üniversitesi İşletme Bölümü'nü bitirdi. Çeşitli şirketlerde üst düzey yöneticilik ve Genel Müdürlük görevlerinde bulundu. 1987'de Hİzmet ve İşletmecilik A.Ş.'deki Genel Müdürlük göreviyle başladığı STFA grubundaki yöneticiliğine, 1992'den bu yana Sofra Yemek ve Üretim ve Hizmet A.Ş.'deki Genel Müdürlüğüyle devam ediyor. Deniz Gürsoy, Çilingir Sofrasında Rakı, Çilingir Sofrasında Rakı Mezeleri, İnceliklerin Kadehindeki Şarap, Zengin Sofraların Lüks Tatları, Denizin Çıtırı Hamsi, Aşkın İlacı Çikolata, Sohbetin Bahanesi KAhve, Tarihin Süzgecinde Mutfak Kültürümüz) ve Tesbih, Parmak Uçalarındaki Huzur adlı kitabının yanı sıra yemeksanayiine yönelik Yemek ve Yemekçiliğin Evrimi ve Toplu Yemek Üretimi gibi kitaplarıyla da tanınıyor. Deniz Gürsoy aynı zamanda beş yıllık kaptandır.
