I loved the variety of appetizers, desserts and complete meals-both vegetarian and those involving many different types of meat-so you can easily find items that the whole family might enjoy. I appreciated the brief introduction by the author along with an easy-to-understand review of the paleo diet with that dietary do's and do not's. All the recipes can be tweaked for individual needs and specific spice combinations that fit your taste. The best part? Quick prep time and cooking is generally all on a sheet pan so clean-up is a breeze. We have enjoyed each of the recipes we have prepared thus far. I am thrilled to have more vegetables and variety on the family menu!
These are solid everyday recipes, though some of the meats got exotic towards the end. The strongest sections for me are the sides and the beef section. Most recipes are healthy-ish, but I would have appreciated nutrition information. And photographs of at least some of the recipes.
Ellgren's instructions are clear, and the recipes are very easy to follow. If you eat paleo, this is a must. If you're just looking for decent sheet pan recipes, this is worth checking out (that's why I had it), but there may be better general sources.
There is no excuse in this day and age for a recipe book without photographs. I realize the recipes may be just as good, but it just seems lazy to omit the visuals.
My husband and I started the Paleo diet this year and, while it's not impossible to find recipes that fit that diet, its not easy. I was excited to win this book in a Goodreads giveaway and I held off reviewing it until I could try some of the recipes.
First, there are no pictures. That's a bit of a draw back for me because I think that is one of the best things about cookbooks. But there are a lot of recipes, which kind of makes up for it. The prep time for most of the recipes are super short - like 5-20 min. The cook times are also not terribly long, which is also nice.
The ingredients can be difficult to find, but are worth it because you are replacing not very good ingredients with healthier alternatives. These alternatives can be expensive.
We tried three recipes: the Salsa Verde Roasted Chicken Breast, the Ground Beef Stuffed Bell Peppers, and the Dense Fudge Brownies. All of them were really tasty, but slightly on the lackluster side. For instance, the Bell Peppers were yummy and filling, but we felt it was missing something. We decided to add beans and rice to the recipes the next time we made it. Same with the chicken; it could have used a few more vegetables than onions.
The brownies were a surprise for us. We've tried to cut out sugar, so this was quite the rich treat for us. I expected them to be overly sweet with a tablespoon of vanilla extract and 2/3 cup of maple syrup, but they were actually not too bad. They were of a spongy texture and the almond taste was almost too much, but we were both surprised to find they paired amazingly well with unsweetened vanilla almond milk.
I would definitely recommend to anyone trying the Paleo diet, or just looking for healthier recipes. Just be prepared to modify to suit your tastes.

What a wonderful concept! All in one pan, minimal prep and clean up. The recipes look absolutely amazing and I can't wait to try them. Had to knock off a star for no photos. I will reevaluate after trying a few recipes.
