Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Fantastic illustrated book for kids. Enjoyed this as a child and having fun sharing with my own kid. Light introduction to spycraft absent of history. Still a product of its time as this was originally produced well before the advent of the world wide web.
This is a very cute book for kids that was enjoyable for me to skim through as well. Actually plenty of useful information in here, just packaged for children, but I feel like there was more real value than I expected. Loved the illustrations. Fun little book!
