Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

My annual Christmas book & I thoroughly enjoyed it. I will save it & read it again some Christmas in the future. If you don’t want to believe Jesus Christ is our Savior, don’t bother selecting this book. If you are open to letting Jesus into your heart, you will feel his warmth in these words.
This is a nice collection of Christmas stories. Most of them are very memorable and inspiring. Some gems for me included a few great stories on forgiveness and stories from the childhood of Richard Crenna and Brenda Lee.
