Very easy to veganize the recipes and sufficiently accessible ingredients for low-income individuals.

An absolute treasure chest! Classics abound like hummuses, falafel, and baked butter beans. Lots of interesting vegetarian salads with fresh green string beans, black eyed peas, garbanzos, and white (cannellini) beans.
Delish dips, apps, and casseroles galore!
My favorite section so far is "soups and stews" with the hearty spices sausage/lentils/kale soup in first place. Other recipes include minestrone, chowders, navy bean, numerous chilis, and veggie stews. Making better use of lentils was a New Year's resolution and this book is just what I needed.
(Includes short basics section on best cooking methods/tips, prepping dried beans, and storage.)
