I learned a ton here.

About the original wheat and the way grains have been modified so much that they are not even recognizable to the body. Even organically.

About enzymes and how they work in the human body. Enzymes are involved in every process including digesting, breathing and even thinking.

This book goes over what happens to our food when soils are depleted of enzymes from pesticides and the mass production of genetically modified foods.

And of course, how and why einkorn is as important today as it was thousands of years ago.

Great read!

The author is at his best when he relates his own story - his childhood, travels and discoveries on his own farms. The rest is interesting and the arguments are sincere. I would have enjoyed more detail about the evolution of wheat - how varieties were chosen, the role of shelf life in this selection and specifically how nutritional value of wheat has changed with each new variety. Unfortunately the writing is generally colloquial, repetitive, and in need of heavy editing. Otherwise this is a valuable source of understanding for an increasingly important topic.
