An old favorite (1998?) Minestrone soup, Split Pea and Mulligatawny are musts from this cookbook.

I was surprised and appreciate the no-nonsense style of this cookbook. Classic technique and 90s styled food photography. Almost all the recipes sound good. Classics from a diversity of cultures. I personally like a little more of history in my cookbooks, although I am not offended by the fact that the food is the star of the book, not the personality or creativity of the author.

One thing I was puzzled by was the name of the dish “stracciatella alla fiorentina”. Perhaps it was just the author trying to be cheeky, but “alla Fiorentina” does not mean with spinach in Italy like “Florentine” does in French cuisine.

Good and simple little book.
I like the introduction going over equipment, stocks and garnishes.
The soup goes over some classics with a little variation on a few of them .
The recipes are written in an easy to understand way with a few minor things I would change.
The one main thing I find problems with in cook books in general is listing ingredients as 1 carrot, 1 onion, etc. It is more helpful to list by weight or amount like 2 cups of chopped onions, 1 cup of chopped carrots also helpful is if you list the medium onion as 8 oz and medium carrot as 4 oz. This helps you when you are shopping as well as when you are chopping.

Comforting! Chilled melon soup with strawberry garnish on a beautiful plate is the waspiest thing I’ve ever seen. But they all look so good, from the most frivolous to the heartiest. Inspires me to eat more soup.

Soup! I’m a big fan of these recipes. These encouraged me to venture out of my comfort zone in both eating and making different things. Lovers of soup will definitely be lovers of this recipe book of soups hot and cold, savory and sweet, complicated and simple.
