All recipes for 4 or more. Tough when only one person.

I heard that the keto diet is really good for weight loss and resetting your insulin resistance, but I couldn’t imagine how people eat mostly fat. What on earth do they eat?

This book gives an overview of keto, lists of what to eat and what to avoid, and tons of recipes. A lot of these recipes involve new-fangled sweeteners and ways to make fake versions of your favorite foods (bread, crackers, pancakes, etc.). I’m not interested in that, but there’s a recipe of corned beef hash with riced cauliflower that I want to try. Oddly, some of the foods that are discouraged in the front of the book are featured in recipes in the back. (Ex. Don’t eat tilapia. Well, ok, eat it with this butter sauce.)

I don’t know. Maybe this diet is helpful but I find myself too lazy to really try it.

We started working with a trainer and got a diet overhaul got thrown at us. I got really paranoid about cooking, and I sort of needed to reset how I approach our daily food intake. This helped A LOT. We are not full Keto adherents, but this eased some pain of zero carb afternoon and evenings when I didn't know what to do. Extra bonus: not everything included the versatility of eggs like so many paleo and keto recipes and collections do, and since I don't eat them, that was invaluable.

This book gives helpful shopping lists you can copy and take to the store with you. Along with list of what to stay away from - which I found highly beneficial! There are a ton of low-carb recipes in this book, including some for dessert. They are all easy to read and follow along, nothing in this book is complicated, so as long as you have basic cooking skills these recipes should work great for you.

Despite the title this was pretty light on the why and how of keto and the recipes were just meh.
