I haven't actually baked from this book, but had taken a pastries class from Jim Dodge years ago. Every recipe we learned was flawless. He puts subtle twists to traditional recipes that truly elevate them in subtle ways. He's great at suggesting good ingredients that bring out the essence of each dessert.
