I have not yet had a chance to cook anything from this book, but there are some mouth-watering recipes that I have highlighted. The pictures in this book are helpful but are not that great. I picked this book because it also had some health benefits behind these recipes. These are homemade so you will need some time to make.
I received my copy via a Goodreads giveaway. Though 'lighter' and 'comfort food' generally occupy different places in my mind, I was delighted by this collection of meals, due to their truly lighter-yet-comforting nature. I plan to pursue some of these recipes as soon as I'm done paging through the book, and ranking the meals. The text is properly 'literate' (clear, readable), and the photos are very appealing. Highly recommended.
Refreshed: Lighter, Simpler, Comfort Food is a book of comfort food recipes that have been tweaked to make them lighter and healthier than comfort foods typically have been. In a very touching preface, he dedicates the book to his mother, and wears pink chefs coats in support of others who are or were afflicted with breast cancer.
The recipes are fun, uncomplicated, and not adhering strictly to any low fat or low calorie scheme. As an example of the types of recipes in the book, take Sweet Potato Brulee. Why have I not seen a recipe for that before? It makes perfect sense! With cinnamon, saffron, chives and yogurt, it ticks all the boxes for originality, flavour, and nutrition. And it is not a difficult recipe to make, with the method explained effectively in less than 55 words. Concise and delicious.
I especially loved the section on breads, which stuck the the book's theme of 'easy, original, delicious and full of flavour.' Welsh Rarebit Loaf? English Muffin Bread? High-Rise Apple Crisp Scones? Yes, please!
The photographs are EXTREMELY close up views of the dishes, which is something new, and it certainly grabs your attention. The picture of Red Jasmine Soup is so close, it looks like you could completely submerge yourself in it!
Overall, it is a fun cookbook to read, and there are so many recipes that I want to try, which is rare for a book that is not purely vegetarian. Highly recommended, and lives on the intersection of healthy and delicious
Refreshed: Lighter, Simpler, Comfort Food by Jim Bailey offers up comfort recipes that are lighter in fat. As Bailey writes he dedicated his cookbook to his mother, Marilyn, and his step-mother, Anne. His mother died from breast cancer. As the author writes:

A book loaded with recipes for our well-loved comfort foods tweaked to make them healthier for us. The Sweet Potato Brûlée is amazing, and I am not ashamed to say that I have made it TWICE in the last week! Well worth having! Recommended.
