Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Out of the, I believe, 115 poems in this anthology I found 11 of them to be above all the rest:

Now, it should be noted, I am also in this anthology; and no: mine is not one of the 11 poems listed. While I do have a good memory of writing the poem, and the inspiration of why I wrote it; I find my own poem to be somewhat average, if not less than, I wrote it in 2003 while listening to "El Salon Mexico" by Aaron Copland. It is called "Mexico" (pg. 129). Out of the 11 I found to be exceptional above all the rest, only 5 of the 11 poets I've read before. If I read the rest before, I do not remember. Now, I'm more critical than the average person, it's actually one of the things I'm known for at the website this anthology comes from (allpoetry.com); or used to be known for, I don't critique as much as I once used to. So, this review should be of no surprise to anyone there that knows me. Excluding the above 11, out of the 115 poems…about 40 or so are good, 40 or so are average and about 20 are below average. I don't know if people chose what poem to go into the anthology, I know I didn't but maybe that should be an option next time. I mean, as stated, my poem comes from 2003, this anthology is from 2015; I've written much better work since. If you knew me: this is me being very nice.
