A James Beard Award-winning author offers a primer for preparing the fabulous fish, plus forty-five recipes on which to try out your new skills.
Salmon is the third-most consumed seafood in North America, not only for its exceptional flavor and versatility, but for its undeniable health benefits. Rich in Omega-3s, it's a rich protein source for those looking to eat healthier, consume less meat, or transitioning to a paleo or pescatarian diet. Salmon features forty-five recipes showcasing the best ways to prepare this luscious, accessible fish. Acclaimed author Diane Morgan has crafted a go-to reference for home cooks who want to add more creative preparations of salmon to their repertoire. Recipes include all savory meal occasions--appetizers, dinner, pizza, brunch, and more--providing inspiration for healthy eaters and fish lovers alike.
Morgan isn't kidding when she says this book is everything you need to know. She discusses farmed vs caught, species, and butchering a salmon. Do you "butcher" a salmon? I don't know, but after reading this book, you'll be able to cut one apart expertly. The recipes look delicious and many contain photos. There are some really interesting ones that I can't wait to try. There is only one recipe missing. That wonderful sauce for smoked salmon that some guy up in Lund, Canada makes. I'll keep searching.
I eat salmon at least once a week, so this cookbook is a fantastic addition to my salmon recipe collection. I’ve made most of the recipes in the past six months and most are delicious. I also like the wine pairing suggestions that come with each recipe.
I didn't read all the recipes in here and I didn't try any of them yet, but it looks as if there are some good ones in this collection, so I'm including it on my list here for future reference.
Extremely informative and helpful. I don't live in a place where I can get super fresh fish, but this still extremely helpful to read. The recipes sound delicious too.
