The Sugar Solution Cookbook: More Than 200 Delicious Recipes to Balance Your Blood Sugar Naturally starts with a good description about unrefined, slow carbs such as legumes and leafy vegetables compared to refined carbs such as white bread, pasta, crackers, and baked goods. Slow carbs are much, much healthier.

Author, Ann Fittante, offers tips such as eat less but eat more often and avoid portion distortion.

Roasted garlic vinaigrette
Buttermilk smashed red potatoes
Oatmeal cookies w/ cherries

Everything I've made from this book has been amazing! My kids sometimes grump at me because of all the new tastes and textures... but it's all good stuff. The salmon is fabulous and the turkey stroganoff are some of my favorites.

One thing that I found helpful is to follow the recipes exactly the first time (even if you have never heard of the ingredient--go to the grocery store and find it) and try it their way first- you'll be glad that you did.

I gave this cookbook a five star not because of the recipes (a lot of them we would not cook) but because of the way it explained how different foods affect the glucose level in the body. It gave a good discussion of what foods to eat and why.
