● 從外觀上區分,稻米有長粒米、中粒米、短粒米、巴特那米、玫瑰米、珍珠米、紅米、黑米等不同種類。一般說來,長粒米和中粒米經常與前菜和主菜搭配,而短粒米在西方國家通常是用來做布丁的。而日本產的米多為短粒黏米,適合用來做壽司;有些歐洲產的米也是短粒米,適合用來做類似肉菜飯的風味菜餚。
  
● 在亞洲,根據日本科學家1928年的定義和命名,食用水稻主要分為日本稻(japonica)及印度稻(indica)兩個亞種,前者為台灣多數人食用的蓬萊米,後者則為分佈於南亞的再來米,但中國人幾個世紀以來卻稱它們為粳和秈。
  
● 在印尼,只有婦女才可以進入穀倉,而且一天只能進去一次。如果家裡恰有客人到訪,那麼女主人會用梯子爬進穀倉,好讓裡面的稻米靈魂察覺不到有人在一天內兩次入侵這塊神聖的領地。
  
● 西歐在很長一段時間裡都把稻米當作一種香料。在米蘭,稻米作為「從亞洲經希臘傳來的香料」,甚至被徵重稅。
  
● 如果你去走訪全世界,詢問最好的米飯質感應該是什麼樣的,那麼你會得到不同的答案。兩個極端品種是巴斯馬蒂米和壽司米,前者有光澤,沒什麼水分,粒粒分明,而後者柔軟且有黏性。一般來說,人們喜歡顆粒分明的米飯,軟而不爛,只需輕輕地咀嚼。

更精彩的是本書介紹了來自印尼、美國、義大利、土耳其、芬蘭、日本、牙買加、阿富汗、伊朗和中國等國家和地區的200多種食譜,主要論及了如何用稻你做主料或配料的多種特色的烹飪方法。這本書出版後深受美食家的青睞,於1993年獲得詹姆斯‧比爾德基金獎、安德列‧西蒙紀念獎。

I have been wanting to read this book since The Great Rice Meltdown Of 2015, in which I went to the grocery store for rice and promptly freaked out because there were two entire aisles of it and I felt I did not know enough about rice to make a decision, and so bought like a 75-cent bag of minute rice and then went home and cried. (There may have been some other things going on in my life.) But it turns out that what I actually want to read is more like a rice guide: for X type of food, Y type of rice. This is not that book. It is, instead, a collection of poorly written Rice Facts, plus a lot of recipes. The search continues!

翻譯非常糟糕
書本身編排也不理想的怪書
本以為會介紹米的各種知識
結果只在第一章草草帶過
而且幾乎只講東南亞,旁及部份歐美
東亞幾個稻米大國反而沒啥寫到
幾乎全部的篇幅都是食譜

翻譯超悲劇
許多專有名詞完全不知所云
如細菌血漿,怎麼想都想不出原文會是啥
還有雜訊很多的碾魔機
我只看過把雜訊翻錯成吵
這還是第一次看過反過來的誤譯...

還有譯者不知道馬來西亞華人與當地人混血女性叫娘惹
音譯為諾依恩亞或諾恩亞,至少比細菌血漿好一點...

最不解的是明明是繁中版,看來也不像是簡轉繁的書
居然把我國翻做中國台灣...

以上只是我還記得的怪翻譯
剩下不通順,不知所云的地方族繁不及備載

大部份食譜我個人都沒啥興趣...
米還是當主食單吃就好~

my copy is a beautiful hardbound. very interesting. it describes the culture, the myth and the cult around rice in contries where rice is staple food. all of a sudden, rice is not simply a steamy bowl of food that i have taken lightly.

Hm ... some lovely ideas in here and I would like to eat more rice :)
