This book is about obsession, cravings, and licit indulgences. It is about deliriously delicious, silkily sensuous, soul-stirring chocolate desserts, about Rabelaisian pleasures, and fantasies come true.
These seductive cakes, elegant ice creams, lustrous sauces, mouthwatering truffles, divine wafers, and unbelievably satisfying brownies are all from the kitchen of Marcel Desaulniers, a truly inspired chef.
At the Trellis Restaurant, in Colonial Williamsburg, Marcel Desaulniers has created a unique and innovative cuisine. One of the joys of the Trellis is its extraordinary Chocolate Phantasmagoria, White and Dark Chocolate Dacquoise, and Death by Chocolate — to name just a few. The recipes for these and other magnificent desserts are now revealed, detailed with foolproof, step-by-step instructions. Following the author's invaluable advice, the home cook can successfully create even the most elaborate of these chocolate wonders.
From a unique Chocolate Chip Cookie that will make all others pale by comparison to Simply the Best Chocolate Brownie, from Ebony and Ivory Chocolate Truffles to White Chocolate Ice Cream, from Double Mocha Madness to a fantastic Chocolate Wedding Cake, the kaleidoscopic glories of Marcel Desaulniers' chocolate repertoire are presented here in full color, each as delightful to make as it is to eat. This is a book for endless pleasure.
I love this cookbook, mostly for the photographs, which make me drool.
Marcel Desaulniers is a chocolate genius. He used to have a show on tv, but I haven't seen him in several years.
I have actually managed to make a number of the recipes in this cookbook, but my main complaint about it is that the recipes aren't really practical for mere mortals. If you have every kitchen implement known to man, and all the time in the world, you would definitely be able to make anything in this book. The directions are really, really good. But they also sometimes run on for PAGES.
But if you ever go to The Trellis and are lucky enough to taste the divine dessert Death By Chocolate, you will also want to run out and buy this book immediately. It's just that good.
When it comes to baking with chocolate, nothing tops the recipes contained here.
The Old Fashioned Chocolate Cake is a family favorite. I have attempted most of the recipes and while they may be intimidating, the instructions are very precise making each recipe doable. Just be sure to give yourself plenty of time. You may not need every tool listed to complete the recipe, it may make some steps a bit more complicated.
Remember, baking is fun! and the eating is even better.
Well. What can one say about the best darn chocolate-themed cookbook ever? David and I discovered Desaulnier's restaurant, Trellis, on our first anniversary trip to Williamsburg. The dinner was blah. But MAN am I glad we stayed for dessert. I bought the cookbook on the spot and even got him (Desaulnier, not David) to sign it for me!
As I paged through this book I started to drool. I can't wait to try so many of these recipes. While at first glance they look really involved, but when you take a closer look you realize they aren't too bad. I just hope that the actual product lives up to these great pictures! This is how a recipe book should be.
