Cooking Light is an American food and lifestyle magazine founded in 1987. Each month, the magazine includes approximately 100 original recipes as well as editorial content covering food trends, fitness tips, and other culinary and health-related news.
A very attractive-looking cookbook with a wide range of recipes, and the mix-and-match scheme is good in theory ... except that most of the recipes include extras / sides / inclusions to make up their quote calorie count, which makes it less user-friendly than advertised. Also, for goodness' sake: no one eats one cookie. Stop making one cookie a serving size. Just stop it.
3.5 stars just because it happens to match up with what I’m looking for—menu ideas for lower calorie meals. These are not inspiring, mouth-watering combinations, but they don’t seem too bland either. Solid suggestions for the calorie-counter planning meals.
As I looked through the receipts in this ebook I felt confident I can have my sweets also. Staying in a 1500 or lower calorie deficit seem easier with knowing the meals are going to be nutritious
LOVE the idea of this book but I've got several issues with it. 1. Most of the breakfasts are carb-based. Muffins, pancakes, biscuits, and other whole-grain options. Very few offer any kind of protein heavy dishes, which dieters know, is what sustains you to the next meal. (If I at 2 biscuits for breakfast and nothing else it'd last me about a half hour before my tummy was growling and I was searching for my next bite.) 2. These meals look fantastic but aren't realistic. There are ingredients in these dishes that you'd have to buy a whole package of something for, but then nothing else to use them up on. "Mr. Stripey Tomatoes", "Maple Smoked Bacon", "Giardinieras" (whatever those are) and "Coconut flour" being prime examples - and that's only in the first half of the book. Just not the average items to keep in the pantry - and these random things are in many of the dishes. That being said, truly, I love the idea of this book - it's exactly what I've been thinking about doing myself with a three-ring binder. :)
Have Tried: Lumberjack Hash - quite good easy, nice change of pace for breakfast Bacon-cheddar corn muffins - awesome, will make at least once a winter Taco Rice Salad - tasty, filling salad, makes enough to have for lunch all week, and works well as leftovers. Blueberry Coffee Cake - didn't work out for me Salmon with Maple-Lemon Glaze - tasty, but nothing special Smothered Steak Burgers - tasty, but nothing special Crispy Spicy Snack Mix - easy, tasty, makes a fair amount. Will likely make again.
Also good, but have in other cookbook: Tuna Noodle Casserole Sausage and Cheese Breakfast Casserole Grown-Up Grilled Cheese Sandwiches Bacon, Ranch, and Chicken Mac & Cheese
Still want to try: Peppery Monterey Jack Pasta Salad Superfast Chef Salad Butternut Squash Soup Gazpacho with Shrimp and Avocado Relish Chile con Carne Shrimp Fra Diavolo Curried Beef Short Ribs
This is a fantastic cookbook! My family and I are truly loving it. We have tried many many many recipes and not one has failed us yet in terms of taste and ease. I highly, HIGHLY, recommend this cookbook for people who are trying to eat healthier, watch their caloric intakes, and want to do those things with tasty dishes. This is one of the best cookbooks I have ever bought!
I've been waiting to get this book for a while now. I love it. The only issue is the lack of variety of breakfast options. I like that all the meals can be mixed and matched and each recipe helps you stay within your calorie range.
I really like most of Cooking Light's cookbooks - the recipes are rarely complicated and typically involve ingredients that I have on hand or could easily get. Maybe I need to get a subscription!
This cookbook has lovely photos. Most of the meals are meat based, which will be great for some and not for others. I didn't see many recipes that I actually wanted to try, but I did benefit from the nutrition notes and thinking about portion size.
