The author of the runaway hit Sheet Pan Suppers expands her repertoire with easy and delicious recipes for dutch ovens, skillets, casserole baking dishes, and more. In One Pan & Done, Molly Gilbert shows you how to use your oven to your advantage, letting it do most of the work to turn out juicy, crispy roasts, succulent vegetables, rich stews, flaky fish, and, of course, sweet treats. Think of it as fast slow-cooking, but with the benefits of baking, roasting, and broiling for concentrated, intense flavor every time. The best part is that with Molly’s simple, hands-off recipes, you’ll have time to savor your meal and enjoy your company. Whether you’re an over-scheduled parent, a busy young professional, or even an accomplished cook, you deserve food that’s big on flavor, but simple on steps. With Molly’s recipes, you get in the kitchen, and you get out. Kick the oven door shut as you walk away—your meal is One Pan & Done.
This cookbook is full of easy, delicious recipes. I haven't used Molly Gilbert's first cookbook, but I think I will have to pick it up after using this one. I love that you get so much flavor and great meals with so little work. It really is hassle free and I see this cookbook being a go to for my weeknight meals after a long day of work. This books was sent to me from Blogging for Books for an honest review.
I had a friend that told me she did not have a dishwasher because she enjoyed doing dishes. For a few years I have mulled that over and as much as I enjoy cooking and baking, I am not sure that I could ever honestly say that I enjoy washing dishes. So when I had the opportunity to review One Pan and Done, author Molly Gilbert's 250 plus page book full of hassle-free meals from the oven to the table, I was eager to read and put this book to the test!
At the front of Molly's book, she offers a primer on pots and pans. This is important to know which to use to prepare these incredible meals and to make it even easier, each recipe is coded to the Pan of choice!
Molly also offers a few words on ingredients making sure the reader has the right elements on hand to make the meal a success. This is very helpful if you have drop-in guests, or you don't have the convenience of a large stocked grocery store Or you are like me and wait until the last minute to prepare meals and just open the pantry and the frig and see what can be 'created' out of what I have on hand.
Ok, right here I must mention my new fave and it's Artichoke Shakshuka which is on page 28. I have never even heard the word Shakshuka until reading 'this cookbook. This is a palatable dish, and pretty enough to serve guests! And it's prepared and cooked all in the same Pan!
And we aren't talking just eggs. See photo with table of contents.
Of course there are foods that require mixing in a bowl before pouring into the pan, but all in all, the clean-up for these dishes is relatively minimal and I'm all about good food and little time spent cleaning the kitchen.
If you like to eat yummy self prepared meals, wow your family and guests, yet have as little cleanup as possible then I believe you would enjoy the One Pan and Done. I certainly have enjoyed it. And I thank Bloggingforbooks for the copy to review in exchange for an honest uncoaxed review.
A really well done cookbook with some great recipes that I am looking forward to cooking (especially some of the desserts!). All the dishes aren’t true one dish meal- you’ll use bowls, mixers & various other vessels, but for the most part they look easy & delicious.
I am a huge fan of easy, one pot/pan cooking, so I was very excited to get my hands on One Pan & Done: Hassle-Free Meals from the Oven to Your Table. My first reaction was that the book itself is beautiful, with outstanding photographs, charming layout, very stylish font and great use of color within the recipes to make each dish look like it would be a treat to cook as well as eat. This book was a very beautifully finished showpiece.
The beginning of each section lists the recipes to be found within, alongside an elegant little illustration of which 'one pan' should be used to make the recipe. There are many different pans and pots used in the book, with each recipe needing just one. They include sheet pans, cast iron skillets, Dutch ovens, baking dishes, muffin tins, and cake, pie, tart, loaf and bundt pans.
So, this book is not for those who are drastically downsizing to only one cooking pot or pan, rather it helps simplify cooking and cleaning up after a meal by reducing the pans that you would cook with. Sounds like a great idea to me! While I do love cooking more involved recipes that take hours and are the definition of 'fiddly,' I do not love doing that every single day. It is a nice break to find an easy, effective, delicious recipe.
Using the book to cook is fun and easy, and the range of recipes is great for cooking at home for your family. All meals are included, as well as desserts, snacks and sides. The main dishes are (for me) helpfully divided into Veggie, Poultry, Fish and Meat, so I can happily go straight to the vegetarian entrees without wading through the pages of things that I would not be of interest to me.
OK, now to my favorite part of the review: recipes I am impatient to try! How about Warm Buttermilk Doughnut Muffins? Or Portobello and Black Bean Chili? And I cannot forget those obscenely delicious looking Halfway Cookie Bites! There are recipes to satisfy every palate. And they are suitable for all cooking skill levels.
This book would be a great (and beautiful) present for individuals or families. Recipes are quick, easy and have little cleanup required.

Wouldn't it be nice if making dinner was as simple as throwing everything in the oven and, voila, out comes a perfectly-cooked meal? Well, Molly Gilbert's new cookbook gets you about as close to that dream as you can get. “One Pan & Done: Hassle-Free Meals from the Oven to Your Table” gives you recipes that, while not exactly work-free, still allows the oven to finish the main course while you are getting everything else on the table. No laborious stirring over the stove or hovering over a grill, no worry about keeping the meat warm while the vegetables finish.
At first I sulked because the title is One Pan & Done and I took that literally but it was actually almost one pan & done. Inspite of this, I was drawn to the book by the great photos and the sweet dialogue of the author, Molly Gilbert. As I flipped through I start jotting down pages of recipes I wanted to hand copy to recipe cards. Ummm, I am going to have to buy this or else check it out from the library very frequently. Or, when is Mother’s Day?
There were several "one pot"cookbooks on the shelf, but this one had the more intriguing content. I have a list of three I must try, if those go well (not expecting miracles here!) this may need to join my small collection of kitchen books! Better for singles & couples or you will be cooking every night.
Love the photography and lots of interesting recipes. However, I'm not sure how much they were tested. For example, just made Saffron Chicken and Rice, it needed to cook almost double the cooking time in the book. Made the Mediterranean carrot soup, it was good but not amazing.
Her interpretation of one pan meals includes cooking things in muffin tins, pie pans, etc. The recipes look nice, though none stood out to me in particular. I did enjoy the photography, but I wish there was an explanation for the + next to some recipes. Overall though, a nice cookbook.
I haven't tried any of the recipes yet, but many appear to be delectable based on my experience with the combinations of ingredients in the book. As a busy mother, One Pan is a divine idea!
This would be a great gift for foodie friends. For myself, the ingredients tend to be on the too-fancy-to-be-practical side. But I love Molly Gilbert and there are some great recipes in here.
This is a great weeknight cookbook. Very family and group friendly. I wish there were more pics, for every recipe. The highlights are the breakfast and fish sections.
For me, a cookbook is a hit when it makes me hungry—when it makes me read the recipes and text, view the food photos, and say “I want that right now”. On that basis, “One Pan & Done: Hassle-Free Meals from the Oven to Your Table” is an unqualified success. Written in a warm, personable style by Chef Molly Gilbert, this is a book to go to time and time again for food that is “about comfort, nourishment, family, and community”. Molly had me from “Bacon Biscuit Bread”, and things just got better and better from there. The format of this book is very user-friendly. The size is easy-to-hold, and the layout is clean, uncluttered, and easy-to-read. Since this is a book about one-pan meals, various types of pots and pans are given their due, and the recipes are each marked with a symbol for the pot or pan called for to make the dish. Pantry staples are also covered, with the author explaining why each item is always to be found in her well-stocked kitchen. The recipe sections include: “Breakfast and Brunch”; “Starters, Snacks & Sides’; “Veggie Mains”; “Poultry”; “Fish”; “Meat”; and “Sweets”. Here is a sampler of the recipes which have me ready to “get out in that kitchen and rattle those pots and pans”: “Herby Egg & Blue Cheese Soufflés (made in muffin tins, these can be stored in the refrigerator for up to 5 days and reheated in the microwave—perfect “on-the-go” breakfast bites); “Warm Buttermilk Doughnut Muffins”; “Linguine Primavera”; “Thai Turkey with Carrot Noodles”; “Quick Chicken Pot Pie”; “French Chicken Stew”; “Roasted Shrimp & Chickpea Salad”; “Garlic-Broiled Scallops with Cherry Tomatoes & Pancetta”; “Sweet & Salty Pork Chops with Snow Peas”; “Maple-Roasted Pork Tenderloin with Sweet Potato Fries”; “Shepherd’s Pot Pie”; “Gramma’s Banana Cake with Peanut Butter Frosting”, and “Chocolate Molten Caramel Mini Cakes”. Hungry yet?

Great meals for those with life on the go. There were so many positive things about this book. My favorite factor was that there are numerous vegetarian recipes included. My wife in a vegetarian, so it's important that when I cook she will be able to eat it. Recipes are grouped in sections based on the main ingredient, making it easy to say, "Oh I have chicken, let's see what I can make." Unlike many other cookbooks these recipes are fairly simple to make and don't require a lot of ingredients only found at specialty stores.
Most recipes come with a beautiful picture that will have your mouth watering before the first ingredient touches the pan. However, unlike the title suggests, the ingredients may have to touch a bowl first. This was the one slight drawback of the book, but it only affected a few recipes. A better title would be "One Pan, One Bowl, & Done."
Overall I greatly enjoyed this cookbook and have already used it for a few recipes. I would highly recommend it to those who love to cook, but don't have time for all the cleanup that comes with it. Plus, you don't ever have to tell anyone the meal was so easy! I received this book from the Blogging for books program in exchange for this review.
Two years ago, we moved into a new home where 3 out of 4 burners on our stove were kaput, and our oven unreliable. Though we're in the process of renovations now, I became an expert on one pot cooking, since essentially, I only had one working element with which to cook. This is a nice collection of full cooking, from breakfast through all mealtimes and on to dessert. The few recipes I've tried so far have been tasty, though some were a little bland for our tastes, but I'll follow my instincts when cooking them next to add some of our favorite spices to kick flavors up. All in all, a fine addition to the shelf.
Thank you to Blogging for books and to the publishers for sending me my copy.
- starting with my usual cookbook bitch - not enough pictures. maybe half the recipes had pictures, and some of those weren't of the recipe, but of the ingredients for the recipe. why. I want to see what it's supposed to look like when its done.
- this book had more actual dinner recipes than her previous 'sheet pan suppers' book, which I liked. but I found most of the recipes contained foods I avoid/dislike, or already had recipes for.
--recipes I found interesting: -herby egg & blue cheese souffles (in muffin tins) -unfried mozzarella marinara -broiled watermelon with balsamic & feta -zucchini cakes (in muffin tins) -pesto zoodle casserole -cashew chicken & veggies
I got this book out of the library prior to lockdown and then kept it for many months. I read and re- read it many times and used some favorite recipients.
