Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

30.11.17 Was not sure what to expect from this anthology at first, except for a rather rapid read through varied ideas and themes.
As the project had its genesis in developing writers from varied backgrounds, with perhaps no set theme in guiding their final submissions, the short prose pieces and poems were really very varied. The pieces were quite varied in their literary finesse too.
There might have been a better overall narrative crafted if the pieces were arranged and grouped according to similar ideas, then the reader might have felt a greater sense of purpose in moving from reading one story or poem to another.
There’s a good range of genres featured in this anthology, with dystopian, imaginative fiction and thriller. Fantasy comes to the fore the most though.
This is a quick read for anyone who might be interested in works written largely by local writers about Singapore. The collection might not be representative of the best in the local lit scene, but was never intended to be. Published by the National Library Board in 2016.
