Sugar, Butter, Flour: The Waitress Pie Cookbook

Rate this book
The official tie-in to Broadway's hit musical Waitress, featuring the recipes for 3 dozen of the show's most evocative and delicious pies.

In the cult classic movie-turned-Broadway production, the eternally optimistic protagonist of Waitress expresses her hopes, dreams, fears, and frustrations through the whimsically named pies she bakes each morning. Sugar, Butter, Flour celebrates this art of baking from the heart, with foolproof and flavorful pies for seduction, pies for mending a broken heart, pies for celebrating new beginnings and pies for all the little milestones that come afterwards. Taking its inspiration from the iconic mile-high pies of the diner case, Sugar, Butter, Flour offers an array of showstopping pies, each with a twist that puts it over the top; from rum-spiked cookie crusts to hidden layers of passion fruit preserves, these are familiar favorites with hidden depths. The ideal gift for anyone who has ever eaten her feelings or baked away the blues, Sugar, Butter, Flour proves there's a perfect pie for every occasion - and that everything looks better with pie.

This year I am trying to get through these recipes, so I will be back with an update once I am finished. I have made 6 pies so far. I have made some modifications (for the savory pies) since I stopped eating meat at beginning of the year. I might try to transition to just being a weekday vegetarian eventually but not anytime soon. I love the nostalgia of the movie/musical with the creative recipe titles and blurbs at the beginning of each one. It's amazing what baking can do.

As a cookbook full of pies the book isn't bad. Compared to the movie though, there are some pies missing or not as described in the movie. I haven't seen the musical yet, so it could be those pies are missing from the stage version.

For example, where's the Spanish dancer pie, the fallin in love chocolate mousse pie, kick in the pants pie? In the movie "Bad Baby Pie" or "I don't want Earl's baby" pie is a quiche, in the cookbook its a vinegar pie.

Overall, it's not bad, just not what I was expecting.

I saw Waitress on Broadway back in October and I have been OBSESSED ever since. This is such a fun cookbook, devoted to the pies Jenna makes throughout the show. Can't wait to try some of these! Big ups to my husband who got this for me for my birthday!

If there are two things in this world I adore, it’ll be musical theatre and pies. So while the Waitress movie never interested me, I’ve watched my bootleg of the new Waitress musical about a hundred times. And I found myself sighing between songs about how much I’d love to have a way to make some of the creatively named pies from the show.

BOOM, BABY! Sugar, Butter, Flour is a compilation of recipes for pies inspired by the ones in the stage show (either off the menu board or mentioned in the script, such as the Betrayed by My Eggs Pie which is a quick gag in the show and a huevos rancheros pie in the book).

The recipes are by Sheri Castle and the writing is by Daniel Gercke, but the book claims to be written by Jenna Hunterson, the main character of the show who’s just ‘proud as punch to have been the inspiration’ for Waitress . I’d almost fallen for the ‘Jenna Hunterson is a real person’ thing until a bit of investigating found the Penguin Random House profile of the 'author' that had that line. ‘Pleased as punch’? Really? Waitress is about a woman who cheats on her abusive husband with her married gynecologist. What part of that are you pleased to share with millions of people? The part where your ex-husband and your doctor slapped you with defamation lawsuits as soon as the movie came out? It was an odd marketing choice to make but, whatever, the pies look great and that’s the important thing.

And ‘great’ is an understatement. Evan Sung did a great job with the photographs and any shots of a person makes sure they’re dressed in ‘Jenna’s’ waitress uniform to keep the theme going. The pie names are cute and clever and the blurbs before each recipe do a decent job tying them into the show. Special props goes to including the opening lyrics to What Baking Can Do at the beginning of the book. The song is sung by Jenna and explains how she uses baking to push away her worries and disappointments ‘and leave them on someone else’s plate for a while’. It’s an interesting choice and one that doesn’t exactly fit the cheerful colors and recipes of the book, but it’s a sentiment I can get behind and one of my favorite songs in the show.

CLARITY:
The instructions are simple and clear, the titles and recipes are easy to read and I haven’t found any with missing steps, and there’s a picture for each recipe. My main concern is that it’s a little difficult to find specific pies without resorting to the index, as the table of contents has the chapters but not the pages of the pies themselves. It makes it more difficult to find specific pies, but there’s nothing wrong with doing things this way so I’m only going to knock off a half star. The whole star comes off with something much more troublesome; how you don't necessarily have indication of how the finished pie will taste. Is it smooth? Are there contrasting flavors? Is it bitter, sour, sharp? Is it very sweet? There were even many cases where I couldn't tell from the title or blurb what was even in the pie until I read the ingredient list.

HUMAN INTEREST:
It’s hard to judge this since Jenna Hunterson isn’t actually real, therefore none of the stories she shares are either, but none of the recipe blurbs have anything personal to add and some so heavily reference the show that they're a little silly. They’re cute and somewhat helpful, so I’ll round it down to two stars. It would have been a middle score of three and a half, but that ‘pleased as punch' line was just so stupid that it ruined whatever illusion the book might have created.

MAKES ME WANT TO COOK:
I decided to treat myself to a batch of pie cookbooks for Christmas, and the moment this one showed up in the mail I’d been revving my engines and stocking my cupboards so I could crack it open Christmas morning and whip up something pretty for dinner. Look at how beautiful that cover is! And the rest of the book if full of equally vibrant and appetizing pictures (one per recipe, halleluiah!). Even Old Joe’s Horny Past Pie (Southern tomato pie) looks appetizing, and I detest tomatoes. It looses a half point for the problems under the CLARITY section, which also effected this section. It's hard to want to cook something when the first impression tells you nothing.

OTHER ASPECTS:
A star for including the lyrics from What Baking Can Do, just because I’m a fan of the show and the song and I’m probably going to go to this book next time I start stress baking.

THE VERDICT?
It’s a welcome addition to my shelves and the first pie book I grabbed to read when I finally got to open my Christmas gifts, but it's also one I can see myself getting fed up with quickly as I search my pie books for specific flavors. I'd say it's best for a library borrow.

Not gonna lie, I haven't made time to try any of these recipes, but I plan to!

There are few pies from the movie, that are missing. I wanted to see recipes for "Falling in Love" and "I Hate my Husband" pie.

I think it's cute that they list "Jenna Hunterson" as the author. Unfortunately, all the blurbs before each recipe don't really sound like Jenna from the movie. The voice is slightly inconsistent.

This is a really nerdy point to bring up about a cookbook, but I've watched Waitress more times than I can count. Jenna is humble, middle-america, and sassy. Whoever wrote this didn't do a complete job of translating Jenna's character to this book.

Yes, I am nerd. Deal.

I have such a weakness for cookbooks about only pie. I’m not sure why. But when I saw this, I had to read it. Luckily I found it at the library because though the recipes did look amazing, the names of these pies are disgusting. So I won’t be adding this to my collection at any time. The recipes and the pictures are beautiful though. It’s just the titles like “I Want to Play Doctor with my Gynecologist Chocolate Mousse Pie” and “Old Joe’s Horny Past Pie.” Just too gross for my kitchen. Somehow this cookbook is related to the movie “Waitress” (I’m not familiar with it), so maybe I’m missing something here. But it doesn’t change my mind about it. Bummer too. The coconut pie and banana cream pie look delicious.

If you love to bake and also love to bake whilst singing "What Baking Can Do" off-key, this is a must have in the kitchen (or in my case, bookshelf).

You'll recognize beloved pie names from the 2007 film, the menu board on the musical's set, and scenes in the show itself. Betrayed by My Eggs Pie sounds absolutely delicious and I can't wait to make I Can't Have an Affair Because it's Wrong (and I Don't Want Earl Will Kill Me) Chocolate Marbled Cheesecake Pie. I do wish we had a recipe for Car Radio Pie though, and of course, the newly added Live Your Life Pie (rest in peace Nick Cordero).

Additionally, I wish there were more recipes that don't require alcohol or nuts, as someone who consumes/buys neither. And probably about half of these would be considered advanced recipes, something few novice pie-makers will understand until they're elbow deep in flour. But the glossy photos and gorgeous design will win anyone over.

Probably the only cookbook to make me emotional (Thanks for Taking Me to the Moon MoonPie will never not make me teary) and a perfect guide for baking pies worthy of Joe's Pie Diner, even if you don't understand every subtle reference to the musical in the recipe descriptions.

very good recipes

The names are over the top and not my style because you don’t know what you are getting until you get to the recipe. So that’s an annoyance but the recipes are solid and I definitely will buy this book

A brilliantly clear cookbook with insight on BASIC pie skills (which some of us always need), plus lots of great ideas about how to remix the classics.

Reading this book was the most fun I’ve ever had reading a cookbook. I can’t wait to make these pies. It’s wonderful to read after watching the Broadway musical. You must read it while listening to the songs. I’m planning to listen to the songs when I make the pies. Which one to do first, that’s going to be a tough decision.

A few months ago I had the great joy to see Jessie Mueller in the Broadway musical Waitress, based on the movie of the same name written by Adrienne Shelly. It tells the story of Jenna Hunterson, an unhappily married waitress in a small town with an amazing ability to create delicious pies based on what she is feeling at the moment.

It is a teriffic show, filled with wonderful songs by singer Sara Barielles, with a good book and a great ensemble. As I was watching the show, I was thinking, wow, these pies sound so great, I'd love to be able to make them myself. (They sell mini pies in a small jar at the theater.)

Cue the new cookbook from Pam Krauss Books/Avery- Sugar Butter Flour- The Waitress Pie Book. The book is credited to the character Jenna Hunterson, but the recipes are actually by Sheri Castle, with the text by Daniel Gercke and photographs by Evan Sung.

The book begins with Jenna's Rules for Baking (and Life), with helpful tips for those of us to whom pie crusts are a puzzle (guilty). Then we get right into the pies, starting with Fruit Pies like Sweet Victory Pie (a cherry pie), Banish the Glum Plum Galettes, and Big Guy Strawberry Pie, topped with a basil whipped cream.

The photos are gorgeous, and I like the layout. It begins with an explanation, then lists the ingredients in bold in the middle of the page, making it easy for you to write your grocery list from this. The instructions follow, along with tips and a color photo of each pie.

The Savory Pie section has some fabulous pies, like Betrayed by My Eggs Pie (chorizo, eggs and butter), My Husband's a Jerk Chicken Potpie (chicken with peppers and onions- my husband will love this one) and Old Joe's Horny Past Pie (a traditional Southern tomato pie).

The Chocolate and Nut Pies section has the most creative-named pies- I Wanna Play Doctor With My Gynocologist Chocolate Mousse Pie, and I Can't Have An Affair Because It's Wrong (and I Don't Want Earl To Kill Me) Marbled Chocolate Cheesecake Pie- among them.

The last section is titled Lulus: Blue-Ribbon Winners. Lulus are are showstopper pies, and here you'll find Deep-Dish Blueberry-Bacon Pie (described as a "perfect diner breakfast all cozied up in a slice of pie"), Mermaid Mashmallow Pie (like an ambrosia salad in a pie) and Thanks For Taking Me To The Moon Peanut Butter MoonPie Pie (peanut butter cream topped with marshmallow whipped cream and MoonPies).

If you are a pie baker or you want to be, Sugar Butter Flour is a book you will want to have on your shelf. I'm pretty sure my brand spanking-new copy will soon be covered in sugar, flour and butter very soon as I attempt to make my husband these luscious dessert treats. And if you are a fan of the film or Broadway show Waitress or know someone who is, this is a must-have.

Moment of truth: I didn't bake any of these pies yet. But I did read through the whole book, and it's pretty fun. Be aware that the cookbook is based on the pies from the musical, not the movie. There were a few recipes from the movie I was really hoping to see and didn't--that's not a bad thing, just telling you so you're aware. There were a couple of people who complained about thinking Jenna was a real person, which is silly. The title page has the real author's name as the author of the recipes; not having it on the cover is common for book or movie-based cookbooks. I'm excited to try a few of them and may tweak my review when I do. Suffice it to say, this is a good pie book primarily consisting of classics with a twist.

This cookbook is fun! Great pics. Interesting recipe names that I originally thought were funny but I later found out are references to domestic violence so… not funny 😬. I guess if I’d seen the movie or play I would have understood better. I was impressed with the variety of gluten-free pies. I had fun making and eating them. My only complaint is some of the recipes didn’t quite turn out and I feel that could have been avoided with more explicit instructions.

Here’s what I made:

Jumping Without a Net Bottomless Strawberry-Rhubarb Cups- my meringue never got to stiff peaks and I saw a few other reviewers on Instagram who had the same problem so I think it is a recipe issue. It was still super delicious and I ate all of them myself!

Leeky Roof Potato Pie- the sweet potato crust is something I’ve never seen and turned out well. Yummy savory filling.

Lost Shepherd’s Pie- best mashed potatoes I’ve ever had. I just wish I’d known hot potatoes would explode out of the piping device I was using hahaha. If I’d thought about science more I would have guessed this. Oops!

Sit On Your Ass Chili Frito Pie- just like traveling tacos! Yummy! The filling tastes even better the next day.

Thank you for the gifted copy Avery Books!

First off, I have not made any of the pies in this cookbook, but I have already marked a couple and when I do make them I will update my review. This cookbook is very witty and some of the names of the pies reflect that. On my short list to make are The Apple of my eye rum raisin hand pies, Life's just peachy Keen Polka Dot peach pie, Old Joe's Horney past pie, (a yummy looking tomato pie with a butter cracker crust) and Wake up and Smell the coffee pie. There are a lot of images included in this cookbook and while I received an ARC copy and my images are black and white, I guessing that the regular copies will have beautiful colored copies.

I was very happy to win this book in a Goodreads giveaway, but the opinions are all my own

If you really like the movie/musical you'll love the book! I remember watching the movie good few years ago and thinking "Someone should make it into a cookbook" and they finally did! The pies are cheerful, colorful and they also taste great (yes, I did make few of them already!).
Recipes are easy to follow and the taste combos are brilliant! Flicking through the book and reading the pies' names you'll have flash back from the movie - there is a strong reference to the story line.
Book is also well published - great, bright, colorful photos, layout is pleasant to the eye and recipes are easy to follow.

I got this cookbook as a birthday gift and I LOVED it! I have already used the recipe for the pie crust and it got great reviews from the family. I LOVE LOVE LOVE the movie "Waitress" and would LOVE to see the musical if it ever tours my neck of the woods. My only complaint is that many of the pie recipes featured in the movie are not included. Granted, I haven't had the opportunity to see the musical and I know the recipes are based on that, but fans of the movie I am sure are looking for a little recipe crossover and there is very little. That said, this cook book is great all on its own, and I look forward to making many more of the pie recipes :)

Having just seen the quirky musical dramedy "Waitress" on tour, I had pie on the brain. Naturally, I couldn't resist a themed pie cookbook (conveniently on sale in the lobby), so I took it home. I have yet to try any of these recipes, but the book has two things in its favor already: the commitment to character and specificity is pretty solid, with every name-dropped pie recreated with a little scene-setting paragraph from Jenna; and the recipes actually look pretty good. Even a throwaway joke about an "Old Joe's Horny Past" pie leads to an interesting tomato and cheese savory pie with a butter cracker crust, which I think I may dream about tonight.

The pies are a true hit in my family my personal favorite is the peanut butter moon-pie pie I make it for any party and its always a crowd favorite. the other pie I highly recommend you try if you get this book is the love liberty and pursuit of happiness pie I make it every year for the forth of July per my families request this pie is a blueberry pie inside a strawberry pie topped with some cream cheese and fresh strawberries and blueberries the colors are perfect for the forth of July and in the words of Jennifer Coolidge "that makes me want a hot dog real bad".

This book is very special to me! As a Waitress the Musical fanatic and a home baker, this book is everything I adore! It is beautifully designed and incorporates the musical in all kinds of ways. So far, the marbled chocolate cheesecake pie is my favorite! It has been an instant hit for the 30+ people I’ve made it for and now several family members ask for it specifically.

This is very well-themed.

I don't know how to review a cookbook, but I read over a few recipes and they're detailed enough I think I can make something out of this so that's a plus. I like the variety between fruit, savoury, and sweet pies since I've always preferred savoury pies and am very picky over dessert pies. Very excited to make these for people's birthdays this summer.
