let me start by saying this book will be very dry to those not belonging to the niche of j-knife fans/culinary nutjobs. if you are in the club get happy because this text is very informative, also bilingual! a plus for those who are learning to understand japanese. the book has great pictures and diagrams illustrating the differences between knife shapes and regional variations. the section on blade maintenance and sharpening is an absolute must for any j-knife enthusiast.
