About a year ago both of my ancient crock pots died within a month. I had a big one for extended family dinners and potlucks and a small one for just us and used them both pretty often. My daughter checked to be sure my kitchen wiring was ok and my kids and nieces all encouraged me to pop the extra cash and get an 'instant pot'. I was leary at first - I don't pressure cook because when I was in my teens in the 1960's Mom had a pressure pot of spaghetti sauce blow up in the kitchen and my sister and I spent months cleaning the walls and ceiling. And I don't fry. Anything. Fried food is bad for you. You want french fries you should go to MacD's. Fried Chicken, Church's does that very well and I don't have to clean up the mess on stove, counter, and wall. But, mostly to shut them up, I went to my Ace Hardware and got one. Ask the clerk if he had heard anything about them and he suggested that I come and let him know how it worked after I tried it.
Needless to say, I was an almost instant convert. I use it more for slow cooking, as I am comfortable with that style of cooking and have old standby recipes for it. But I can cook pinto beans, which I once soaked overnight and cooked all day, in less than three hours. Almost any meal with chicken or pork is now one-to-one and a half-hour preparation instead of all afternoon tied to the kitchen. Cleaning the machine seemed overwhelming at first, but the manufacturers have a stainless steel pot that is reasonably priced and easily scrubbed. Just one pot!
I found several new meals in this book by Louise Davidson, all worked very well in the one pot, and a nice change from those old stand-by's I have prepared for years. I rate a cookbook by how many recipes I bookmark. This one passed the test. I didn't count the number I marked. The ones I marked were outstanding. As usual, most were ideas for me, but a surprising number were food my hyperpicky might be persuaded to eat. Another winner from Davidson!
