The book contains "The Basics" which includes brown rice and congee. It also contains sections for "Appetizers and Dim Sum", "Soups", "Vegetables and Tofu", "Poultry", "Pork and Beef", "Seafood", and "Noodles and Rice".
What's special about the section labelled "The Basics" is that in addition to your rice and congee dish, it also includes recipes for sauces such as the "Sweet and Sour Sauce" and "Brown Sauce". Other recipes in this book refer back to such basics in their ingredients.
This book is great because the recipes are straight-to-the-point, and easy to replicate. Most dishes include the typical ginger and garlic in their ingredients. A rule of thumb is to always have your soy sauce, oyster sauce, brown sauce, sweet and sour sauce, and sesame oil on hand.
Recipes are also easy to be modified. For example, the sweet and sour sauce chicken can be fried or stir-fried. Serving sizes can typically range from 4 to 6 people per recipe.
I loved the easy conversational tone of the book and the simplicity of the recipes. After reading this well organized and user friendly cookbook cover-to-cover, I found so many of my favorite recipes, that I couldn't resist firing up my wok to try the Beef and Broccoli for dinner. The recipe was easy to follow exactly. Ingredients were already in my pantry. Delicious! So much tastier and healthier than take-out. My family loved it and I did too. Looking forward to trying lots of these recipes!
