Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.

Recht interessantes Buch, auch, wenn es sich meiner Meinung nach weniger auf bereits bekannte Touristenattraktionen in bereits bekannten Städten fokussieren könnte. Für Städte wie London, Wien und Barcelona gibt es bestimmt genügend Bücher, die auch mehr in die Tiefe gehen! Den Teil, in dem es Vorschläge für mögliche Rundtouren durch Europa gibt, fand ich allerdings recht interessant- auch, wenn er recht wenige Seiten einnimmt und nur stichprobenartig einige Sachen auflistet, mit denen man die vorgeschlagenen ein, zwei Tage pro Stadt herumbekommen kann.
Such a great concise collection of some of the best cities in Europe complete with maps, history notes, budgeting notes, top sights to see and places to eat. It had everything I wanted and more. Can’t wait for borders to open once more so I can try these places out for myself!
