I've been a vegetarian for about 20 years. My husband prefers lots of meat and cheese with his meals. I'm always in search of quick and easy vegetarian recipes that he'll eat, which is like looking for that proverbial needle in the haystack. I didn't have a lot of hope with this book, since it's vegan, which is even more limited for his tastes. I'm thrilled to say the few recipes I've made from this book so far have been a huge hit with both of us!

I like using the slow cooker. I can get everything chopped and put together in the early morning. If I know I'll be busy in the morning, I can chop the veggies and get things ready the night before. Then, at the end of the day, the meal is ready and there is no work to be done.

The recipes are fairly simple. The only time-consuming part is the chopping of vegetables.

Only a small percentage of the recipes have accompanying photos. While the photos are always nice, mainly because it's a quick and tempting visual, I don't find them necessary.

Holy cow am I obsessed with this book. I'm a lazy cook anyways so I'm a huge fan of slow cooker recipes. Just as the title promises this book is SUPER EASY, there are a few recipes tat call for a few steps that are in addition to throwing food in a crock pot, but most of these recipes are straight up throwing stuff in a crock pot. And as a vegetarian, I can also add cheese to any of these recipes. Holla! Some divine recipes include: sweet potato chili, peanut sauce roasted veggies, baked potato tacos, brussel sprouts curry, and skyline chili. What's not to love?!?! Every recipe I've tried has been a slam dunk, I literally want to try them all (and there are over 100!). Get this book!! My only beef (ha ha) is that there aren't a whole lot of pictures, other than that I have NO complaints!

I've been using my slow cooker a bit more lately and have been looking for more ideas for plant based recipes. This book is full of great recipes and I've liked the ones that I've tried so far. It also has tables for cooking beans and grains, which is super helpful.

I am not a vegan but I love to eat meatless meals. I love soups and pasta without meat. I also love to use my slow cooker for anything from soups to rice puddings. The Super Easy Vegan Slow Cooker Cookbook by Toni Okamoto Has 100+ recipes that are ready when you are. There are basics such as Beans, marinara sauce, vegetable broth, roasted vegetables, and fruit compote. The recipes, for the most part, has minimal prep work. Easy to follow recipes from newbie to experienced cook. There are a range of vegan dishes as well as salad recommendations to go along with your dish. There is also a section at the back of the book for staples such as Pesto, Salsa, Chutney along with others.

I hope to get a lot of use out this cookbook and if you are a vegan looking for easy recipes in the slow cooker, give this book a shot!

I would not recommend this cookbook for a new vegan. We tried several recipes and had to add either Bragg’s Liquid Aminos or cheese sauce.

Fantastic cookbook! I had never used a crockpot before and these recipes are easy and delicious. I am able to adjust recipes with ease and confidence to what I have on hand as well as personal preferences.

I count my slow cooker as one of my best investments and to prove that point I am always looking for new recipes. This book, while I am not a vegan personally, included a lot of new recipes for my slow cooker. I do not eat a lot of meat and also try to stay away from cheese, so I often cook vegan recipes just because they fit the bill of no meat and no cheese. I love how this book introduces you to recipes that are healthy, cost conscious and easy to prepare. Lots of soups and stews, which in my house is a typical winter recipe list. So this book was perfect when it was cold or just rainy outside and I needed comfort food.
If you like exotic dishes, such as curries, or are interested in protein rich dishes, but are on a budget, give this book a try. Grains in stews or soups are a great way to fill you up and adding beans as a protein source is not only tasty, but also saves you often money compared to a traditional meat dish. I found this book to have easy to follow recipes that did not require a lot of specialized ingredients. I prefer pantry items in recipes since I know I will use up whatever I buy before the expiration date.
I can highly recommend this book to anyone that loves a slow cooker, wants to cook healthy meals and has to stay on a budget. If any one or all three of these fit your bill, then this book is for you!

Vegan Slow Cooker Cookbook

There are a lot of recipes here. Not all of these recipes are slow cooker recipes. Also there are many recipes in here that require making another recipe from this book as an ingredient in them. This might not be a problem for some people. I, however, only have one slow cooker and use it to save time. It would defeat my purposes to have to use the slow cooker for 6-8 hours to make a garlic sauce that is an ingredient needed in a main dish that I will have to also cook another 6-8 hours. None-the-less, there are lots of recipes in here that I can't wait to try.

Focus is on “easy”, what’s sacrificed is taste

I’ve tried a few of these recipes and am kicking myself for cooking them in the first place. Brussels sprouts slow cooked for 8 hours...why did I think that could make sense?! If the recipe doesn’t call for ingredients that are completely separate recipes that take hours and hours to cook, then the taste is either non-existent or wrong. My husband and I just threw out the Brussels Sprout Curry which is such a tragic waste of food. Unfortunately we won’t be taking a chance on any more recipes from this particular book.

This book gives the inspiring vegan a solid arsenal of quick things to throw together. For those who are experienced vegetarians wanting to take the next step this book is NOT for you.

You are already make every one of these recipes.
Nothing new and nothing to separate this book from dozens of others.

This book was not well backed. Only a dozen pictures for the entire book.

Would love to have a book from this author giving me more adventurous recipes from them. They certainly cook the way I eat.

Fortunately, I borrowed this from the library. Sure, it seemed like a long time to cook the teriyaki tofu (page 116) on low for 6 hours, but I've never done tofu in the slow cooker, I'll trust the book. WRONG. I checked on it at 5 hours because it smelled like something was burning in the kitchen. Any tofu that touched the sides of the slow cooker had melted into it and it's going to be a nightmare to clean. I was tired of hearing that everything in the slow cooker tastes the same so I took a gamble and lost. This cookbook has no pictures.

If you have adopted a plant based lifestyle this cookbook is a great beginning. If you are looking to eliminate meat, dairy etc for just a few meals a week, pick up Toni Okamoto’s cookbooks. These recipes are easy not only in prep but also in the ingredients. I find accessibility of ingredients key in my cooking as hard to find items deter me from trying out recipes. A nice variety as well. The layout is reader friendly. Above each recipe she gives a little blurb and also includes tips. Overall, I will definitely be adding some of these quick and easy meals to my dinner menu.

I will rate this later, when I'm reunited with my slow cooker. Please note that not all recipes here require a slow cooker but the structure is explained in the preface. It grew on me because it felt like the structure is thoughtful and the book feels like a one-stop shop cookbook. For example, I'm making a basic soup then there's a salad that pairs nicely with it, then a variation on the basic soup plus a recipe for a good side. I'm excited to try a recipe!

The title says it all. I don't have a slow cooker, but I like to look at vegetarian/vegan books because I would like to be convinced to want/need one. This one definitely had some recipes I'd try. Overall the recipes are super simple and straightforward with very few "extra" steps beyond throwing everything in the cooker. I also liked the tips/tricks offered at the bottom of many of the recipes.

Super easy and super good

We switched from Keto diet to plant based and I no longer knew what to cook. The recipes in this cookbook are super easy to prep and the ingredients easy to find in the store. My husband grew up on southern cooking and he absolutely loves every dish from this cookbook.

I wish this cook book had more pictures! There are a few good ones in this book, but I prefer when I can see how each recipe should look when it's done.

Some of these recipes are pretty basic, I was surprised to see so many salad recipes and things that were Mexican or Indian 'inspired'. Overall I wasn't wowed, but there is a variety of recipes.

I may update this review once I’ve made a few recipes… but having read through, it looks pretty good.

I dropped a star due to the amount of salad recipes. Salads are my actual favorite food. But it’s weird that there are so many (I counted a salad recipe every 4-5 pages) in a ^crockpot/slow cooker* cookbook.

This is a great book for vegans--however, it's NOT so great for *diabetic* vegans.

Almost every recipe was very carb heavy, and none of the nutritional information so kindly provided included carbs, so you even have to figure that out for yourself.

Easy start to plant based living

Love the basic filling ingredients used with crockpot. Variety of delicious cost effective recipes. Highly recommend for those new to the vegan lifestyle.

A lot of these recipes seem bland and boring to me, or like something I could find online. However having a bunch of slow cooker recipes in one place is nice. I find myself using the sauces more than the actual food recipes.

I made the chana masala and really enjoyed it. Didn't try any other recipes. The book is easy to follow and has some good ideas. A few recipes were super basic, meant for beginners.
